CHORIZO, TOMATO & PEPPER SOUP

A heart warming spicy little number that won’t take you more than 25 minutes to make!

Provided by leighn79

Time 25m

Yield Serves 4

Number Of Ingredients 0

Steps:

  • In a large pot heat up some oil (not olive – vegetable, rapeseed or butter)
  • Add in the onion, garlic, chorizo, chilli and pepper cook for about 5mins
  • Then add in the passata, chicken stock, rice and season well
  • Simmer for approx 20-25 mins, stirring occasionally.
  • And that’s it done – you can top with basil and or parmesan if you fancy too, before serving with some tasty crusty bread – enjoy!

Tips:

  • Use high-quality ingredients for the best flavor. Look for fresh, ripe tomatoes, flavorful mushrooms, and a good-quality chorizo.
  • Don't be afraid to adjust the ingredients to your liking. If you like things spicy, add more chorizo or chili pepper. If you prefer a milder soup, reduce the amount of chorizo or omit it altogether.
  • Be patient when cooking the soup. The longer you simmer it, the more flavorful it will be. If you're short on time, you can cook the soup for a shorter amount of time, but it won't be as flavorful.
  • Serve the soup with your favorite toppings. Some popular options include sour cream, shredded cheese, chopped cilantro, and avocado.

Conclusion:

Chorizo, tomato, and mushroom soup is a delicious and easy-to-make meal that's perfect for a weeknight dinner. It's also a great way to use up leftover chorizo. With its smoky, spicy flavor, this soup is sure to be a hit with your family and friends.
