- Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. - Cut all fat and gristle off the meat, and pound each steak out with a meat tenderizer until they are thin but not tearing. In a shallow bowl, combine flour, bay leaf, salt and pepper. Dredge steaks in the flour mixture until evenly coated.

CHUCK STEAK AND GRAVY

- mix all of the above ingredients in a large ziplock bag. put in the refrigerator and let marinate at least a hour, preferably overnight. in a frying pan, use 2 tablespoons of oil heated sear the steak in the "HOT" oil 9 minutes on both sides. while searing, prepare a water/flour mixture. mix 1/2 cup of flour with 1 cup water. set aside. remove the Chuck Steak from the frying pan. put the meat in your crock pot. put the 1 small package of sliced mushrooms and 1 white onion diced on top of the meat. turn down to medium heat the juices from the steak in the frying pan. add the water/ flour mixture slowly into the frying pan get it all mixed together then pour the gravy over the chuck steak in the crock pot. cook until tender and serve over white rice.
