Time 30m

Yield 4-5 serving(s)

Number Of Ingredients 8

1 lb ground beef
1/2 green bell pepper, chopped
1 (15 ounce) can barbecue beans (do not drain)
1 (15 ounce) can great northern beans, rinsed and drained
1/3 cup barbecue sauce
2 tablespoons yellow mustard
1/2 cup water
1 (7 1/2 ounce) can buttermilk biscuits

Steps:

  • In a skillet, cook beef over medium high heat, until browned, 6-8 minutes. Drain off any fat.
  • Stir in green pepper, beans, barbecue sauce, mustard and water. Heat to boiling, stirring occasionally, over medium heat.
  • Cut biscuits in half and place around edge and in center of skillet.
  • Reduce heat to medium, cover and simmer 12-15 minutes, until biscuits are cooked in the center. (they will be like dumplings and will not brown).

Tips:

  • Soak the beans overnight: This is an essential step that helps to soften the beans and reduce cooking time. Alternatively, you can use the quick-soak method, which involves boiling the beans for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of beans: Different beans have different flavors and textures, so using a variety will add depth and complexity to your chuckwagon beans. Some good options include pinto beans, black beans, kidney beans, and Great Northern beans.
  • Don't overcook the beans: Overcooked beans are mushy and unpleasant. Cook them just until they are tender, but still hold their shape.
  • Use a flavorful base: The base of your chuckwagon beans is what will give them their flavor. Use a flavorful broth or stock, and add plenty of spices and seasonings.
  • Add vegetables and meat: Vegetables and meat can add extra flavor and texture to your chuckwagon beans. Some good options include onions, peppers, carrots, celery, and ground beef.
  • Serve with cornbread or biscuits: Chuckwagon beans are traditionally served with cornbread or biscuits. These accompaniments help to soak up the delicious sauce.

Conclusion:

Chuckwagon beans are a hearty and flavorful dish that's perfect for a casual meal. They're easy to make and can be tailored to your own taste preferences. So next time you're looking for a satisfying and delicious meal, give chuckwagon beans a try.
