8 tbsp unsalted butter (softened)
¾ cup light brown sugar
2 large eggs
¼ cup buttermilk (**see notes if no buttermilk on hand)
2 cups all purpose flour
½ tsp salt
1 tsp baking soda
3 bananas (mashed (approx 1½ cups))
½ cup chopped walnuts
½ cup chocolate chips
additional chocolate chips for the top of the bread prior to baking

Steps:

  • Preheat the oven to 375°F. Spray loaf pan with baking spray set aside.
  • In a large mixing bowl cream the butter and sugars.
  • Add the eggs, buttermilk and mashed bananas. Mix until well combined.
  • Add the dry ingredients to the wet ingredients. Mix until just combined.
  • Fold in the walnuts and chocolate chips.
  • Pour the batter into the prepared loaf pan.
  • Top with additional chocolate chips.
  • Bake for approximately 30 minutes covered with loosely with foil. Remove then continue baking for an additional 30 minutes or until fully cooked, top will be a golden brown. (foil helps to prevent too much browning)
  • Allow to cool in the pan then remove to continue cooling on a wire rack.

1/3 cup sugar
1/2 tsp baking powder

3 medium very ripe bananas
juice of 1/2 lemon
1/2 cup coconut oil
1 cup vegan chocolate chips/chunks

  • 1. Preheat oven to 375 degrees F. 2. In a big bowl, combine all dry ingredients and sift well with a fork or a whisk. In a medium bowl, mash the bananas, leaving some small chunky bits. 2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup butter (melted)
1/2 cup sour cream (I used low fat)
2 eggs
1 teaspoon vanilla
1 cup coarsely smashed (chunky very ripe banana (about 3 small))
1 6 oz. package semi-sweet chocolate chunks
1/2 cup sliced almonds (toasted and cooled)

Steps:

  • Preheat oven to 350º
  • In a small bowl, whisk together flour, baking powder, baking soda and salt; set aside.
  • Combine sugar, melted butter, sour cream, eggs and vanilla in a large mixing bowl; beat until well blended. Stir in bananas. Add flour mixture to banana mixture, stirring just until moistened. Mix in chocolate chunks and nuts.
  • Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with baking spray with flour. Bake for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.
