A fun and easy break from the usual that kids will love. This recipe makes 1 sandwich, but it's easy enough to make 2, 3, or 4.

2 slices raisin bread
peanut butter
½ banana, sliced
2 tablespoons chocolate chips, or to taste
¼ cup ricotta cheese
1 tablespoon white sugar
1 dash ground cinnamon

Steps:

  • Toast raisin bread in a toaster oven until lightly brown, 2 to 3 minutes.
  • Spread peanut butter onto toasted bread. Top 1 slice with banana; top other slice with chocolate chips. Cover banana and chocolate chips with ricotta cheese. Sprinkle sugar and cinnamon on top.
  • Toast in the toaster oven just until cheese is melted, 3 to 5 minutes. Sandwich slices together.

1/4 cup old fashioned oats
1 ripe banana, peeled and sliced
1 teaspoon chia seeds
1 tablespoon peanut butter
1 teaspoon honey or other sweetener
2 teaspoons chocolate chips

Steps:

  • Place the water, oats, banana, chia seeds and peanut butter in a small pot and bring to a boil. Once the mixture begins to boil, bring to low heat and stir. Add in the teaspoon of sweetener and continue to stir, until the oatmeal has a creamy consistency. Remove the oatmeal from the heat and transfer into a small bowl. Sprinkle chocolate chips on top.

2 cups mashed ripe bananas (about 5 medium)
1-1/2 cups sugar
3 large eggs, room temperature
1/2 cup unsweetened applesauce
1/4 cup canola oil
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chunks
FROSTING:
4 ounces reduced-fat cream cheese
1/4 cup creamy peanut butter
3 tablespoons butter, softened
1 to 1-1/4 cups confectioners' sugar
Chopped salted peanuts, optional

  • Preheat oven to 350°. Line 24 muffin cups with paper liners., Beat first five ingredients until well blended. In another bowl, whisk together flour, baking soda, baking powder and salt; gradually beat into banana mixture. Fold in chocolate chunks., Fill prepared cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., For frosting, beat cream cheese, peanut butter and butter until smooth. Gradually beat in enough confectioners' sugar to reach desired consistency. Spread over cupcakes. If desired, sprinkle with peanuts. Refrigerate leftovers.
