1 bunch fresh cilantro leaves, stems removed (about 2 cups)
1 cup sugar
1 Thai red chile pepper, seeded and chopped
2 garlic cloves, halved
1/2 teaspoon salt

2 cups canola oil
1 head Chinese or napa cabbage, finely shredded
1 small head red cabbage, finely shredded
1 English cucumber, chopped
1 package (10 ounces) frozen shelled edamame, thawed
2 medium ripe avocados, peeled and cubed

3 green onions, sliced

Steps:

  • Finely grate enough zest from limes to measure 1 tablespoon. Cut limes crosswise in half; squeeze juice from limes. Place zest and juice in a blender; add cilantro, sugar, red chile pepper, garlic, salt and pepper. While processing, gradually add oil in a steady stream., In a large bowl, combine cabbages, cucumber, edamame, avocados, carrots and green onions. Drizzle with dressing; toss to coat.

3 romaine lettuce hearts, shredded
1/2 cup red onion, diced
4 roma tomatoes, chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups four-cheese Mexican blend cheese
1 (15 ounce) can whole kernel corn, drained
3 cups tortilla chips, broken and simply crushed between your hands
1/3 cup fresh cilantro leaves
1/2 cup fresh lime juice, usually about 4 limes
1/2 cup canola oil
1/2 cup sour cream
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.

  • I am notorious for not measuring, because I adapted this recipe from a more fattening version called "El Toritos Cilantro and Pepita Salad Dressing". I recommend that you adjust seasonings to your liking. In a food processor, add all the ingredients, except for the olive oil. Process until the ingredients are emulsified and then slowly drizzle the olive oil until the dressing appears rich and creamy.
