1/8 teaspoon salt
1/2 cup apple, skinless, finely chopped
1 cup fresh sweet potatoes, cooked and mashed
1 large egg
2 large egg whites
3 tablespoons vegetable oil
2/3 cup plain yogurt

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, and apples.
  • In another bowl combine sweet potatoes, egg, egg whites, oil, and yogurt. Add sweet potato mixture to flour mixture and stir all ingredients until just mixed.
  • Spray muffin tins with vegetable cooking spray and spoon 1/4 cup of batter per muffin.
  • Bake for 20 to 25 minutes or until done.

Tips:

  • Use fresh apples for the best flavor and texture.
  • Peel and core the apples before chopping them, or use a food processor fitted with a shredding blade.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter, or the muffins will be tough.
  • Fill the muffin cups only about 2/3 full, or the muffins will overflow.
  • Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Cinnamon apple muffins are a delicious and easy-to-make treat that are perfect for breakfast, brunch, or a snack. They're also a great way to use up leftover apples. With their moist texture, sweet and tangy flavor, and warm cinnamon aroma, these muffins are sure to be a hit with everyone who tries them.
