- Place a large pot or rondeau on the stove and add 3 cups water. Bring the water to a boil and add the clams. Cook until the clams pop open. Though it is important to stir the clams as they cook, take care because the shells are fragile and break easily. Put the clams in a colander and reserve the cooking liquid. Shell the clams; discard the shells and reserve the clam meat and the liquid separately. Add the bacon to another large pot and cook over medium heat until crispy. Drain the bacon with a slotted spoon onto a paper towel, dust with Aleppo pepper and set aside. Add the butter to the bacon fat in the pot and quickly cook the celery, about 1 minute. Sprinkle with salt and black pepper. Remove the celery with a slotted spoon and set aside. Add the garlic, leeks and onions to the pot and sprinkle with salt and black pepper. Cook until the vegetables become tender and translucent, 3 to 5 minutes. Add the vermouth. Continue to cook until almost all of the liquid has evaporated, 8 to 12 minutes. Meanwhile, in another large pot, combine the cream, thyme, potatoes and bay leaves. Bring the mixture to a gentle simmer and cook until the potatoes are tender, 5 to 8 minutes. Sprinkle with salt and black pepper. Add a splash of hot sauce and Worcestershire. Stir to blend. Taste for seasoning. There is a good chance there will be grit in the clam cooking liquid. Strain it and add it to the onion/leek mixture. Stir to blend. Taste for seasoning. Combine with the potato mixture. Add the clam meat, reserved celery, tarragon and dill. Remove and discard the bay leaves. Add the marsala. Taste for seasoning. Add more cream and water if needed. Top with the bacon just before serving and serve with the Baked Bread. Cook's Note: When you strain the clam liquid, line the strainer with cheesecloth to catch any remaining grit.
- Baked Bread for Clam Chowder Dipping:
- Preheat the oven to 350 degrees F. Arrange the bread on a baking sheet in a single layer. Melt the butter in a small skillet over low heat and add the garlic. Sprinkle with salt and white pepper. Heat gently for 1 minute. Use a pastry brush to coat the bread slices with the butter. Pour any remaining butter into the bottom of the baking sheet. Dust the bread with the paprika and dill seeds. Place the baking sheet in the center of the oven and bake until the slices are browned and crispy, 12 to 15 minutes. Remove and cool for a minute before serving alongside the soup.

- In large stock pot, add 2 Tbl. butter, salt pork and water and sauté over medium-high until fat has rendered, water has evaporated, and pork is getting crispy. (Lower heat to medium, then medium-low as water evaporates). Remove salt pork with slotted spoon and set aside. Add 4 Tbl. butter, scrape bottom of pan well, then add celery and onion. Sauté over medium heat until vegetables are soft. (About 5 minutes or so). Add salt pork back in. Add flour and stir to mix. Sauté over medium heat, stirring, for 5 minutes to cook out flour taste. Cook but do not brown. Add chicken broth and scrape bottom of pot again. Stir until all is blended. Add milk, potatoes, bay leaf, chicken base, thyme, white pepper, garlic powder, Old Bay Seasoning, onion powder, and 1/3 cup of clam juice or water. (*It will seem like too many potatoes, but there is more liquid to come later). Cover pot with tight-fitting lid, and bring just to a boil over medium heat. Turn down to LOW, and simmer until potatoes are fork tender. Stir occasionally to reduce foam and scrape bottom and sides of pot. Keep an eye on it. (I stir about every 7 minutes). Be sure to stir briskly so that edges of potatoes break down and help to thicken the chowder naturally. When potatoes are almost tender, after 15 - 20 minutes, remove lid and cook another 10 minutes until potatoes are fully done and crisp edges of potato are now rounded, stirring often. Add one can of clams with the juice, and the second can drained. Stir well. Stir in heavy cream and white pepper. Heat to a low simmer, and stir in cornstarch slurry, 1 Tbl. mixed with 1 Tbl. COLD water at a time, until you reach the thickness that you prefer. Remove from heat and cover. Let sit for 20 -30 minutes. Serve garnished with fresh chopped parsley and crusty bread for sopping, or oyster crackers if desired. Hot sauce can also be served at the table for those who would like some. *Leftover chowder will be super thick when chilled. DO NOT add any liquid. Chowder will thin out again when reheated.

- In a large saucepan over medium high heat, fry the bacon until crisp, about 10 minutes. Drain on paper towels, reserving the bacon fat in the pan, crumble and set aside.
- In the same saucepan with the bacon fat, saute the onion and potatoes for 3 to 5 minutes. Sprinkle with the flour and stir well to coat.
- Pour in the clam juice, bring to a boil, reduce heat to low and simmer for about 15 minutes, or until potatoes are tender.

- Rinse the clams in several changes of cold water and drain well. Tip the clams into a large pan with 500ml of water. Cover, bring to the boil and simmer for 2 mins until the clams have just opened. Tip the contents of the pan into a colander over a bowl to catch the clam stock. When cool enough to handle, remove the clams from their shells - reserving a handful of empty shells for presentation if you want. Strain the clam stock into a jug, leaving any grit in the bottom of the bowl. You should have around 800ml stock.
- Heat the butter in the same pan and sizzle the bacon for 3-4 mins until it starts to brown. Stir in the onion, thyme and bay and cook everything gently for 10 mins until the onion is soft and golden. Scatter over the flour and stir in to make a sandy paste, cook for 2 mins more, then gradually stir in the clam stock then the milk and the cream.
- Throw in the potatoes, bring everything to a simmer and leave to bubble away gently for 10 mins or until the potatoes are cooked. Use a fork to crush a few of the potato chunks against the side of the pan to help thicken - you still want lots of defined chunks though. Stir through the clam meat and the few clam shells, if you've gone down that route, and simmer for a minute to reheat. Season with plenty of black pepper and a little salt, if needed, then stir through the parsley just before ladling into bowls or hollowed-out crusty rolls.
