Categories     main-dish

Time 45m

Yield 8 servings

Number Of Ingredients 12

1/4 cup olive oil, plus 2 tablespoons
5 cloves garlic, finely chopped
4 cloves shallots, chopped
2 cups white wine
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves, plus sprigs for garnish
1 teaspoon chopped thyme leaves
2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops
1 1/2 pounds (16/20 count) shrimp peeled and deveined with tails left on
1 1/2 to 2 pounds cooked pasta or rice, for an accompaniment
1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

CLAM, SHRIMP AND SCALLOP PAN ROAST

Clam, Shrimp and Scallop Pan Roast image

From "Dinosaur Barbeque, An American Roadhouse" by John Stage and Nancy Radke. The book says, "Shellfish lovers drool over the drunken-sweet richness of the sea infusing every inch of this dish. You can use clams, shrimp and scallops or substitute your own favorites: mussels, oysters or even some firm-fleshed fish. Just be sure to serve the pan roast with a spoon and plenty of good bread to sop up all the tasty sauce."

Tips:

  • Choose fresh seafood. This will ensure that your pan roast is packed with flavor. Look for seafood that is firm to the touch and has a briny smell.
  • Use a variety of seafood. This will add depth and complexity to your dish. Try using a mix of clams, shrimp, scallops, and mussels.
  • Cook the seafood over high heat. This will help to sear the seafood and lock in the juices.
  • Don't overcook the seafood. Seafood cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and chewy.
  • Add vegetables to your pan roast. This will add color and nutrition to your dish. Try using vegetables such as onions, peppers, celery, and carrots.
  • Use a flavorful broth. This will help to add flavor to your pan roast. Try using a seafood broth, chicken broth, or vegetable broth.
  • Season your pan roast to taste. Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of butter to brighten up the flavors.
