4 boneless, skinless chicken breasts, pounded thin
Salt and freshly ground black pepper
2 cups all-purpose flour, seasoned with salt and pepper
4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
2 cups panko bread crumbs
1 cup vegetable oil or pure olive oil
Tomato Sauce, recipe follows
1 pound fresh mozzarella, thinly sliced
1/4 cup freshly grated Parmesan
Fresh basil or parsley leaves, for garnish
2 tablespoons olive oil
1 large Spanish onion, finely chopped
4 cloves garlic, smashed with some kosher salt to make a paste
Two 28-ounce cans plum tomatoes and their juices, pureed in a blender
One 16-ounce can crushed tomatoes
1 small can tomato paste
1 bay leaf
1 small bunch Italian parsley
1 Cubano chile pepper, chopped
Salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs.
  • Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some Tomato Sauce, a few slices of the mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes. Remove from the oven and garnish with basil or parsley leaves.
  • Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Cubano pepper, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.

2 skinless, boneless chicken breasts (about 10 ounces each)
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
1 15-ounce can tomato puree
1/2 cup plus 2 tablespoons grated parmesan cheese
1/4 cup finely chopped fresh basil
1/2 cup all-purpose flour
Kosher salt and freshly ground pepper
3 large eggs
1 1/4 cups grated mozzarella cheese (about 6 ounces)

Steps:

  • Slice the chicken breasts in half horizontally to make 4 thin cutlets. Put between 2 pieces of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Heat 1 tablespoon olive oil in a medium pot over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic softens, about 1 minute. Add the tomato puree, then rinse out the can with 1 cup water and add to the pot. Simmer until the sauce just thickens, about 10 minutes. Whisk in 1/4 cup parmesan and the basil. Spread 1/2 cup of the sauce in a 3-quart flameproof baking dish. Preheat the broiler. Meanwhile, combine the flour and 1/2 teaspoon each salt and pepper in a shallow dish. Beat the eggs with 1/4 cup parmesan in another shallow dish. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Dredge 2 chicken cutlets in the flour, tapping off the excess, then dip in the egg mixture. Carefully lay in the skillet and fry until golden brown and just cooked through, 2 to 3 minutes per side. Transfer to the baking dish. Add the remaining 2 tablespoons olive oil to the skillet and repeat with the remaining 2 chicken cutlets. Add to the baking dish. Combine the mozzarella and the remaining 2 tablespoons parmesan in a bowl. Sprinkle half of the cheese mixture on the chicken, then top with the remaining sauce and the remaining cheese mixture. Broil until the cheese melts, about 2 minutes.

3/4 cup water

¾ (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.

2 lbs boneless chicken breasts, cutlets
salt and pepper
2 eggs
1/4 cup milk
1 1/2 cups Italian style breadcrumbs
1/8 cup grated parmesan cheese
1/2 lb sliced provolone cheese
1 (28 ounce) jar spaghetti sauce (Prego 3-cheese works great)
vegetable oil

Steps:

  • Combine eggs, milk, salt and pepper in a shallow bowl or pie plate.
  • Combine bread crumbs and parmesan cheese in a shallow bowl, plate or pie plate.
  • Dip each chicken cutlet in egg mixture and then coat completely with bread crumb mixture.
  • Heat half inch of oil in a pan over med-high heat.
  • Fry each cutlet and turn over when golden brown.

¾ cup olive oil
1 medium white onion, cut into ½-inch (2.5 cm) half moons
4 cloves garlic, crushed
¼ teaspoon dried oregano
⅛ teaspoon dried thyme
1 can crushed tomato
1 teaspoon sugar
2 teaspoons kosher salt
2 boneless, skins on chicken thighs
2 large eggs
kosher salt, to taste
freshly ground black pepper, to taste
⅓ cup all purpose flour
½ cup italian bread crumbs
3 tablespoons panko breadcrumbs
1 ½ tablespoons coarsely grated parmesan cheese
¼ teaspoon garlic powder
¾ teaspoon dried Italian seasoning
¼ teaspoon dried parsley
1 cup olive oil
1 ½ cups shredded italian cheese blend
2 tablespoons parmesan cheese, for garnish
2 oz spaghetti, fresh or dried
½ cup fresh basil leaves

Steps:

  • Make the red sauce: Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until golden brown and nearly translucent, 5-7 minutes. Use a slotted spoon to remove the onion and garlic from the pot, leaving the oil behind. Set aside the fried onion and garlic for another dish.
  • Add the oregano and thyme and cook until fragrant, 1-2 minutes.
  • Add the crushed tomatoes, sugar, and salt. Bring the sauce to boil, then reduce the heat to medium and simmer for 20-30 minutes, until thickened.
  • Meanwhile, make the chicken: Working 1 at a time, place the chicken thighs in a zip-top bag and use a heavy skillet or meat mallet to pound into thin, even pieces.

  • Heat the olive oil in a large, wide skillet over medium-high heat until it reaches 300°F (150°C).

2 large chicken breasts
50g plain flour
1 egg, beaten
75g fresh breadcrumbs
15g parmesan, finely grated, plus extra to serve
4 tbsp sunflower oil
125g ball mozzarella, cut into 4 slices
300g spaghetti
2 tbsp olive oil
4 garlic cloves, finely sliced
pinch of caster sugar
splash of red wine vinegar
2 x 400g cans chopped tomatoes or passata
1 tsp dried oregano

Steps:

  • Cut each chicken breast in half lengthways so you have four fillets. Put the fillets on a board, cover with a sheet of baking parchment and bash with a rolling pin until they are the same thickness all over.
  • Put the flour in a shallow dish and season with a little salt. Tip the egg into another dish, then the breadcrumbs and parmesan into a third dish, stirring to combine. Working with one chicken fillet at a time, coat in the flour, then dip into the beaten egg, and finally coat in the cheesy breadcrumb mixture. Transfer the breadcrumbed fillets to a plate as you go. To freeze, stack the fillets in a freezerproof container between sheets of baking parchment. Will keep frozen for three months.
  • To make the sauce, heat the olive oil in a shallow pan and sizzle the garlic for 2 mins. Sprinkle in the sugar and add a splash of the vinegar, then tip in the tomatoes or passata. Add the oregano, season and bubble for 10-15 mins, stirring occasionally until thickened. To freeze, leave to cool completely, then transfer to a freezerproof container (portion it into more than one, if you like). Will keep frozen for up to three months. Defrost overnight in the fridge, then reheat in a pan until piping hot.
  • Heat the sunflower oil in a large frying pan over a medium heat and cook the breadcrumbed chicken fillets for 3 mins on each side (fresh or from frozen) until golden and crisp. Arrange on a baking tray. Spoon a little of the sauce over the middle of each fillet, and top each with a slice of mozzarella. Heat the grill to high. Cook the spaghetti following pack instructions, then drain and toss with the remaining sauce. Grill the fillets for 3-4 mins, or 1-2 mins more if they're from the freezer, until the mozzarella is melted and bubbling, then serve.

2 medium or 3 small eggs (slightly beaten)

8 tbs vegetable oil
1 cup dry bread crumbs (fine) 4 Seasons Italian Flavored
2-3 cups tomato sauce
1/4 tsp garlic powder
1/4 tsp basil
1 tbsp butter or margarine
1/2 cup Parmesan (parmigiana) cheese (grated)
8 oz. mozzarella cheese, sliced (cut into triangles)

Steps:

  • Hammer chicken lightly until 1/3-inch thick. Mix egg, pepper and salt. After you dipped the chicken breast in egg mixture you then roll it in bread crumbs. Heat oil in a skillet until it is hot. Brown chicken (both sides). Place chicken into a shallow baking dish. Pour away remaining oil from skillet. Mix tomato sauce, garlic and basil in a frying pan. Bring to a boil and let it simmer for 10 minutes. Stir in butter or margarine. Pour sauce over chicken. Scatter parmigiana /Parmesan cheese over sauce; cover dish and bake at 350 degrees for half an hour (30 minutes). Put mozzarella slices on chicken and bake until cheese is melted (approx. 10 minutes). If you do not have Italian flavored bread crumbs, you can use for this italian chicke recipe regular bread crumbs with 1 teaspoon Italian seasoning crumbed and mixed in.
