1/3 cup (80ml) verjuice
300 gram dried cherries
1/2 cup (125ml) runny honey
1/3 cup (80g) virgin coconut oil
300 gram shredded coocnut
200 gram dark chocolate (70 per cent cocoa), finely chopped

Steps:

  • Bring the verjuice to a simmer in a small saucepan over medium heat. Remove from the heat and add the dried cherries. Cover and leave for 10-15 minutes to plump up. Stir in the honey and coconut oil, then return the pan to low heat and warm gently, stirring until smooth.
  • Line a 25cm × 20cm baking tray with baking paper. Transfer cherry mixture to a food processor, add the coconut and blitz until it comes together in a ball. Transfer mixture to the prepared tray, pressing firmly to ensure it binds. Place in the freezer for 1-2 hours. When firm, remove from the freezer and cut into 12 bars, about 10 cm × 4 cm.
  • Melt chocolate: bring a saucepan of water to the boil, then remove from the heat and set a heatproof bowl on top. Place the chocolate in the bowl and leave to stand, stirring occasionally, until melted. Brush the melted chocolate over the top of the bars, coating them evenly.

3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. 2 eggs, slightly beaten
1 cup sugar
1/4 cup flour

3/4 cup chopped nuts
1/2 cup coconut
1/2 cup quartered cherries

Steps:

  • Mix flour, butter and 3 tbsp sugar until smooth; spread in 8" pan and bake at 350 for 15 minutes.
