Time 20m

Yield 2 serving(s)

Number Of Ingredients 12

2 1/2 lbs mussels
2 tablespoons unsalted butter
1 tablespoon olive oil
1 sweet onion, diced
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons red curry paste
1 (14 ounce) can full-fat coconut milk (lite version is fine too, just won't be as rich)
1/4 cup low sodium chicken broth (or seafood)
2 green onions, sliced
French baguettes (or fries!) or bread, for serving (or fries!)

Steps:

  • Keep the mussels refrigerated until you're ready to use. Once ready, place them in a large bowl of ice cold water. Scrub the outsides of the mussels and remove the string (or "beard") by using a towel or paper towel to pull it out. Discard any mussels that have opened already. Keep the mussels in the ice water.
  • Heat a large skillet or wok over medium heat and add the butter and olive oil. Once it's melted, stir in the onions, garlic, salt and pepper. Stir and cook for 5 minutes, until slightly softened. Stir in the curry paste and continue to stir until it's distributed throughout the entire pan of onions. Cook for 5 more minutes. Stir in the coconut milk and stock, stirring until it's smooth. Bring the mixture to a simmer, stirring continuously. Reduce the heat to medium low. Add the mussels and toss. Cover the skillet and cook just until the mussels open, about 5 to 6 minutes. Garnish with the sliced green onions. Stir the mussels well so the broth makes it into the shells. Serve immediately with baguettes or thin fries.

Yield 2 people

Number Of Ingredients 12

2 tbsp green/red curry paste
1 can coconut milk
1-2 limes, juiced
2 cloves garlic, sliced
1 inch chunk ginger, sliced
1/4 large red onion, sliced
1 bag mussels
2 stalked lemongrass, cut lengthwise and into 3-4 pieces
canola/veg/peanut oil
brown sugar, 1 tbsp
fish sauce, 1 tbsp
bunch of basil, torn up

Steps:

  • heat oil in a pan on med-low heat, add onion and cook until soft, 5 min add curry paste and let cook for a 1 minute add garlic, lemongrass, ginger and let cook for 2-3 minutes. add coconut milk, fish sauce, lime juice, basil and brown sugar. add some water if you need more liquid. bring to boil and turn down to simmer. let it cook down for 5 minutes. add more lime juice if needed. turn heat up, add mussels and cover. cook until they are opened, about 6-8 minutes, mixing them once or twice so they all cook and get some liquid. serve over rice

Tips:

  • To ensure the mussels are fresh, give them a gentle squeeze before cooking. If they close tightly, they are alive and safe to eat. Discard any mussels that remain open after squeezing.
  • Use a large pot or Dutch oven to cook the mussels. This will provide enough space for the mussels to open and cook evenly.
  • Don't overcrowd the pot with mussels. If there are too many mussels, they will not cook evenly and may not open properly.
  • Use a dry white wine for the cooking liquid. This will help to enhance the flavor of the mussels.
  • Add aromatics such as garlic, shallots, and lemongrass to the cooking liquid to infuse the mussels with flavor.
  • Add a touch of heat to the dish with chili peppers or Sriracha sauce. This will help to balance the sweetness of the coconut milk.
  • Serve the mussels immediately after cooking. They are best enjoyed hot and fresh.
