1/4 cup sweetened shredded coconut, toasted
1/4 cup minced fresh cilantro

  • In a large saucepan, combine quinoa, water and salt; bring to a boil. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed. 3/4 cup quinoa, rinsed and drained
1 1/4 cups almond milk
1 3/4 cups low-fat coconut milk
1/4 cup dark brown sugar
Pinch salt
