SECRET RECIPE COLD CORN SALAD

Secret Recipe Cold Corn Salad image

I definitely recommend doubling this recipe as it is so good that you won't have a kernel left. If you are serving this to kids you don't have to put in the red onion and if you have trouble finding sour pickles a deli will always sell you some sour pickle juice if you just ask. Due to the pickle juice, this will develop a sour taste if left overnight so use within a couple of hours of preparing. Enjoy!

CORN SALAD

Corn Salad image

A hint of lime and fresh herbs bring a flavor boost to this simple, make-ahead corn salad that's ideal for summer.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 8

6 ears corn
2 medium vine tomatoes, chopped
3 scallions, thinly sliced crosswise
2 sprigs fresh basil
1 lime, juiced
1/4 cup extra-virgin olive oil
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper

Steps:

  • Remove corn kernels from cobs and place in a large bowl.
  • With the side of a spoon, scrape corn milk from cobs into the bowl. Add remaining ingredients and stir to combine.
  • Corn salad can be made a day ahead and stored in the fridge. Remove from fridge at least 30 minutes before serving.

Tips:

  • Use fresh corn: Fresh corn on the cob is the best choice for this salad, as it has the sweetest and most flavorful kernels. If you can't find fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Cook the corn properly: To get the best flavor and texture, cook the corn until it is tender but still has a slight crunch. Overcooked corn will be mushy and bland.
  • Use a good quality mayonnaise: Mayonnaise is a key ingredient in this salad, so it's important to use a good quality mayonnaise that you enjoy the taste of. Look for a mayonnaise that is made with fresh eggs and oil, and avoid mayonnaise that contains a lot of sugar or preservatives.
  • Add your favorite mix-ins: This salad is a great way to use up leftover vegetables, herbs, and cheese. Feel free to add your favorite mix-ins to the salad, such as diced bell pepper, chopped onion, shredded cheese, or fresh herbs.
  • Make the salad ahead of time: This salad can be made ahead of time, which makes it a great option for potlucks or picnics. Simply prepare the salad according to the recipe and then store it in the refrigerator for up to 24 hours before serving.

Conclusion:

Cold corn salad is a delicious, refreshing, and easy-to-make salad that is perfect for summer gatherings. With just a few simple ingredients, you can create a salad that is packed with flavor and nutrition. So next time you're looking for a light and refreshing salad, give this cold corn salad a try.
