One 2- to 3-pound chicken fryer, cut up
2 carrots, diced
2 celery stalks, diced
1/2 medium onion, diced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground thyme
1/4 teaspoon turmeric
16 ounces frozen home-style egg noodles (such as Reames)
3 tablespoons all-purpose flour
Splash of half-and-half, optional
2 teaspoons finely minced fresh parsley

Steps:

  • Start by putting the chicken in a pot and covering it with water. Bring the water to a boil, and then reduce the heat to low. Simmer for 45 minutes. Remove the chicken from the pot. Set the chicken aside to cool briefly.
  • Shred the chicken with 2 forks, reserving the bones. Return the bones to the pot and boil for 20 minutes. Remove the bones from the pot and discard.

1 1/2 to 2 cups homemade or store-bought chicken stock

2 tablespoons Dijon mustard

1 tablespoon minced garlic

6 ounces uncooked wide egg noodles
1/4 cup butter, divided
1/3 cup all-purpose flour
3 teaspoons salt, divided
1-1/2 cups milk
1 cup chicken broth
2 tablespoons white wine or additional chicken broth, optional
4 tablespoons grated parmesan cheese, divided
1/2 pound fresh mushrooms, sliced
1 garlic clove, minced
1/8 teaspoon pepper
4 cups cubed cooked chicken

Steps:

  • Cook noodles according to package directions; drain. In a saucepan, melt 1/4 cup butter. Stir in flour and 1-1/2 teaspoons salt until smooth. Gradually add milk and broth.
