WIENER AND PASTA POT
This is a recipe I was missing from home. Lennie very kindly came up with it for me. It comes from the Company's Coming Pasta book. I have included my own variations on it. The pasta actually cooks in the sauce. I love this stuff and so did my kids!

Steps:
- In a large dutch oven, combine everything; cover; cook slowly until shells are tender but firm. This should take 15 to 17 minutes.
- My own variation: I always browned my sliced weiners in the pot first before I added the remaining ingredients. I also added a bit of garlic powder, and topped it with cheese at the end.
Tips:
- Choose the right pasta: Short pastas like penne, macaroni, or shells work best for casseroles, as they hold the sauce well and cook evenly.
- Cook the pasta al dente: This means cooking it until it is just tender but still has a slight bite to it. This will prevent it from becoming mushy in the casserole.
- Don't overcrowd the pan: When cooking the pasta, be sure to use a large pot so that the pasta has plenty of room to move around. Overcrowding the pan will prevent the pasta from cooking evenly.
- Use a flavorful sauce: The sauce is what really makes a pasta casserole special, so be sure to choose one that you love. You can use a store-bought sauce or make your own from scratch.
- Add some vegetables: Vegetables add nutrients, flavor, and color to pasta casseroles. Some good options include broccoli, cauliflower, zucchini, and spinach.
- Don't forget the cheese: Cheese is a classic addition to pasta casseroles, and it helps to bind the ingredients together. You can use any type of cheese that you like, but cheddar, mozzarella, and Parmesan are all popular choices.
- Bake until golden brown: Bake the pasta casserole until the top is golden brown and bubbly. This usually takes about 30 minutes.
Conclusion:
Pasta casseroles are a delicious and easy way to feed a crowd. They are perfect for potlucks, parties, or weeknight dinners. With so many different variations to choose from, there is sure to be a pasta casserole that everyone will love.
