I didn't follow the measurements to the letter - just eyeballed it; and I added a couple dashes of hot sauce to kick up the heat a bit.

1 cup water

1 (15 ounce) can chili without beans or 1 (15 ounce) can chili with beans
8 ounces beef hot dogs, cut into 1/2 inch pieces
1 cup cheddar cheese, shredded

  • Preheat oven to 375 degrees F.
  • Remove biscuits from package and lightly press into the bottom and slightly up the sides of a lightly greased 9 x 13-inch baking dish.

This was the cornerstone recipe for several local restaurants in the Flint area where I grew up and is a favorite memory of many who were raised here.

1 tablespoon margarine
1 1/2 lbs lean ground beef
2 medium onions, minced
1 garlic clove, minced
3 tablespoons chili powder

1 (6 ounce) can water
12 ounces skinless hot dogs
salt and pepper

Steps:

  • DO NOT brown ground beef before using. Combine ALL ingredients except hot dogs in a pot and simmer until thickened. Stir occasionally to ensure beef does not clump and cooks evenly.
  • Grind the hot dogs very fine (or chop fine in food processor) stir into beef mixture and cook 15 minutes longer.
  • Use over GOOD natural casing hot dogs (Koegel Vienna if possible) with chopped onion and mustard. The big secret in this recipe is the ground hot dogs. (Hint: Back home, I still used the Koegels' in the sauce, just the skinless ones).

2 c Black Coffee
1 6 oz can Tomato Paste
1 Tbsp Chili Powder
1 tsp Cumin Powder
1 tsp Allspice
1/4 c Vinegar
1 Tbsp Worcestershire Sauce
3 Tbsp Sugar

  • 1. Brown Ground Beef in a skillet and chop up real fine into individual granules. In a separate large saucepan - mix 2 cups of black coffee with all the other ingredients and cook over medium heat until boiling. Add the Ground beef when it has finished browning, drain off fat.
