This isn't a salsa in the traditional sense. It's a more of a refreshing dip! I use my food processor to dice all the vegetables so it isn't as chunky. The result is a fabulous, cool, creamy treat perfect for those summer barbecues!

Provided by Aroostook

Categories     Vegetable

Time 1h10m

Yield 10-12 pints

Number Of Ingredients 18

10 cups tomatoes, peeled, diced and drained
2 yellow sweet peppers, coarsely chopped
2 green sweet peppers, coarsely chopped
1 sweet red pepper, coarsely chopped
1 orange sweet bell pepper, coarsely chopped
2 large Spanish onions, coarsely chopped
5 hot peppers, seeded and finely chopped (Add more if you wish it hotter =0 !!)
2 tablespoons minced garlic
1/4 cup lemon juice
2 tablespoons cider vinegar
2 tablespoons canning salt
1/2 cup sugar
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon onion powder
2 tablespoons cumin
2 cups tomato sauce
2 (12 ounce) cans tomato paste

Steps:

  • Place ingredients in a large heavy bottomed pot and cook for 10 minutes until mixture is very hot.
  • Pack in hot pint jars.
  • Place in water bath for 10 minutes.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the salsa will taste. If possible, use fresh tomatoes, onions, cilantro, and peppers.
  • Choose the right tomatoes: The best tomatoes for salsa are Roma tomatoes. They are firm and have a low water content, which makes them less likely to make the salsa watery.
  • Roast the tomatoes: Roasting the tomatoes before adding them to the salsa gives them a smoky flavor. You can roast the tomatoes in the oven or on the grill.
  • Use a variety of peppers: Different peppers give the salsa different flavors. For a mild salsa, use green bell peppers. For a medium salsa, use poblano peppers. For a hot salsa, use serrano or habanero peppers.
  • Don't over-blend the salsa: The salsa should have a chunky texture. If you over-blend it, it will become smooth and lose its flavor.
  • Season the salsa to taste: Add salt, pepper, and lime juice to taste. You can also add other seasonings, such as garlic powder, onion powder, or cumin.

Conclusion:

Confetti Cheese Salsa is a delicious and versatile dip that can be enjoyed with a variety of foods. It's perfect for parties, potlucks, or just a snack at home. With its creamy texture, cheesy flavor, and colorful confetti, it's sure to be a hit with everyone who tries it.
