COOKIE BUTTER PIE

Cookie Butter Pie image

I tasted Biscoff cookie spread at a grocery store one day, and it was so delicious that I decided to create a no-bake pie with it. You can make this pie your own by substituting peanut butter or another kind of spread for the Biscoff spread and then matching toppings. -Katrina Adams, Mount Olive, Alabama

CHOCOLATE-PEANUT BUTTER COOKIE PIE

Chocolate-Peanut Butter Cookie Pie image

If you like chocolate and peanut butter, you will probably like this recipe. It is kind of like a Reeses, except our family thinks it is better because of the powdered sugar/peanut butter mixture and the cookie on the bottom. This dessert doesn't last very long at our house! The recipe was on the cover of the 1998 Pillsbury Quick and Easy Bake-Off.

  • If you don't have a pre-made graham cracker crust, you can easily make your own by crushing graham crackers in a food processor and then pressing them into a pie plate. You can also use a store-bought pie crust if you prefer.
  • To prevent the whipped cream from curdling, make sure the cream is very cold before whipping it. You can also add a little bit of sugar or vanilla extract to help stabilize the whipped cream.
  • If you don't have any fresh berries on hand, you can use frozen berries instead. Just be sure to thaw them completely before using them.
  • For a more decadent pie, you can add a layer of chocolate ganache or caramel sauce between the cookie butter filling and the whipped cream.

Conclusion:

This cookie butter pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its creamy cookie butter filling, whipped cream topping, and fresh berries, this pie is sure to be a hit with everyone who tries it.
