COOL AND CRUNCHY MELON-CUCUMBER SALAD

Cool and Crunchy Melon-Cucumber Salad image

This summer, add cucumber to a melon salad to make it extra-crisp and cool. We cut watermelon and cantaloupe into cubes and balls for a beautifully geometric presentation that can be eaten with toothpicks. We also tossed them as a salad, dressed with yuzu juice (available at Asian supermarkets and specialty stores), though it's equally out-of-this-world with lime or lemon juice.

Number Of Ingredients 7

1/2 cup watermelon cubes or balls
1/2 cup cantaloupe cubes or balls

Salt and pepper
Basil leaves

COOL ORIENTAL CUCUMBER SALAD

Cool Oriental Cucumber Salad image

I put this recipe together from a lot of different sources after trying in vain to find one I really liked. It has a rather delicate flavor, but you can add a little stronger vinegar if you like. I did research to determine if there was a similar one but couldn't find one. My apologies if it is the same as another.

COOL CUCUMBER SALAD

Cool Cucumber Salad image

This salad is perfect for Summer BBQ's. I like Kraft fat free Caesar Italian dressing on it to "skinny it up". :)

Provided by mydesigirl

Categories     Onions

Time 15m

Yield 4 serving(s)

Number Of Ingredients 6

2 cucumbers, peeled and sliced
2 tomatoes, sliced
2 small red onions, sliced
1/4 teaspoon oregano
1/2 cup salad dressing, your choice
salt and pepper

Steps:

  • Seperate onions into rings and add to cucumbers and tomatoes in a large bowl.
  • Sprinkle oregano, salt and pepper over all.
  • Add dressing and toss lightly.

Tips:

  • For the best flavor, use fresh, ripe cucumbers. English or Persian cucumbers are ideal, as they have thin skin and fewer seeds.
  • Peel the cucumbers if you prefer, but it's not necessary. If you do peel them, be sure to use a vegetable peeler that will remove only the thin skin, not the flesh.
  • Cut the cucumbers into thin slices. This will help them absorb the dressing more easily.
  • Use a variety of herbs and spices to flavor your cucumber salad. Dill, basil, mint, chives, and parsley are all good choices. You can also add garlic, onion, or shallots for a bit of extra flavor.
  • Use a light, tangy dressing to complement the cucumbers. A simple vinaigrette made with olive oil, vinegar, and a pinch of salt and pepper is a good option. You can also use a yogurt-based dressing or a creamy dressing made with mayonnaise or sour cream.
  • Chill the salad for at least 30 minutes before serving. This will allow the flavors to meld and the cucumbers to become even more refreshing.

Conclusion:

Cucumber salad is a refreshing, healthy, and versatile dish that can be enjoyed as a side dish, a light lunch, or a snack. With so many different variations to choose from, there's sure to be a cucumber salad recipe that everyone will love. So next time you're looking for a quick and easy way to cool down, give cucumber salad a try.
