1-1/2 cups Oreo cookie crumbs
2 tablespoons butter, melted
4 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 cup sour cream
1 teaspoon vanilla extract
3 large eggs, lightly beaten
9 ounces semisweet chocolate, chopped
1/2 cup seedless raspberry preserves
TOPPING:
6 ounces semisweet chocolate, chopped
1/3 cup heavy whipping cream
Fresh raspberries and whipped cream, optional

Steps:

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. Combine cookie crumbs and butter; press onto the bottom of prepared pan., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla. 2 tablespoons margarine, melted
32 ounces cream cheese, softened
1 1/4 cups sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla
6 ounces semi-sweet chocolate chips (this 6 ozs of chocolate chips should be melted and cooled slightly)
1/3 cup raspberry preserves, strained
6 ounces semi-sweet chocolate chips
1/4 cup whipping cream

  • Combine crumbs and margarine; press onto bottom of 9-inch springform pan.

6 ounces cream cheese, softened (2 3-oz pkg)
14 ounces sweetened condensed milk (not evaporated milk)
1 egg
3 tablespoons lemon juice
1 teaspoon pure vanilla extract
1 cup fresh raspberry (frozen ok)
2 ounces squares semisweet baking chocolate
1/4 cup whipping cream

Steps:

  • Preheat oven to 350 degrees F.
  • Beat cream cheese (with mixer) until fluffy.
  • Gradually beat in sweetened condensed milk until smooth.
  • Add egg, lemon juice and vanilla; mix well.

Pre-made or store bought Graham Cracker Pie Crust
1 (10 ounce) package frozen raspberries
2 tablespoons white sugar
2 teaspoons cornstarch
1/2 cup water
2 cups white chocolate chips
1/2 cup half-and-half cream
3 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
3 eggs
1 teaspoon vanilla extract

Steps:

  • In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
  • Preheat oven to 325 degrees F. In a pan on the stove, melt white chocolate chips with half-and-half on low-medium meat. Stir occasionally until smooth then set aside.
  • In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
  • Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce. (I added some of the seeds back into the raspberry sauce because I LOVE raspberry seeds!)
