SOMETHING DIFFERENT GREEN BEAN AND CORN CASSEROLE

Something Different Green Bean and Corn Casserole image

Adapted from Southern Living. This is very different from the usual green bean casseroles out there. I prefer sweet onions such as Walla Walla or Vidalia, but ordinary cooking onions are fine too. French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

FRESH CORN AND GREEN BEAN SALAD

Fresh Corn and Green Bean Salad image

A wonderful salad that takes full advantage of summer's best bounty. Paired with grilled meats, this will work well at any BBQ or picnic. Finding this in November has be already longing for next year. In the meantime, I may try this with the frozen variety though I bet it won't be nearly as good. (Update: After WI Cheesehead's experiment with frozen vegetables I managed to track down some fresh corn and beans. Following the directions presented here, the result is sweet crisp vegetables that you simply can't get from the freezer.)

Tips:

  • Use fresh vegetables: Fresh corn and green beans have the best flavor and texture. If you can't find fresh vegetables, frozen vegetables are a good substitute.
  • Cook the vegetables until they are tender but still have a little bit of crunch: Overcooked vegetables will be mushy and bland.
  • Use a flavorful cheese: A sharp cheddar or Parmesan cheese will give the casserole a cheesy flavor. Avoid using a mild cheese, as it will not add much flavor.
  • Add some seasonings: Salt, pepper, garlic powder, and onion powder are all good seasonings to add to the casserole. You can also add other seasonings, such as paprika, cumin, or cayenne pepper, to taste.
  • Bake the casserole until it is golden brown and bubbly: This will ensure that the casserole is cooked through and has a nice crust.

Conclusion:

Corn n' Green Bean Bake is a delicious and easy-to-make casserole that is perfect for a weeknight meal. It is also a great way to use up leftover vegetables. With its simple ingredients and delicious flavor, this casserole is sure to be a hit with your family and friends.
