SCRAMBLED EGGS WITH TORTILLAS
Years ago a friend of mine made eggs and tortillas for breakfast while I was visiting. I've been hooked ever since. My family doesn't ever want scrambled eggs. They always want eggs and tortillas. In fact, the only time I make plain scrambled eggs is when I am out of corn tortillas. It's a very simple recipe but it's very good.

EGG ENCHILADAS
These are scrambled eggs with a Mexican twist that can be served any time of the day. They don't require baking time however; they are slipped under the broiler to melt the cheese. Sometimes I heat the tortillas briefly in the microwave before dipping in the sauce to keep them from cracking when rolling them up. Recipe is from Sunset Mexican Cook Book.

GREEN CHILE TORTILLA SCRAMBLE
This was a favorite among our guests at the bed and breakfast where I cooked for many years. If you wish, add sautéed onions or diced tomatoes to the mix. I sometimes serve this dish with pinto or black beans and a warmed flour tortilla. This dish also lends itself well to be served with a side of chorizo sausage or any other breakfast meat of your liking.

Tips:
- Use fresh ingredients: The fresher the ingredients, the better the scramble will taste. This is especially true for the eggs, tortillas, and vegetables.
- Use a variety of vegetables: Don't be afraid to mix and match different vegetables in your scramble. Some good options include bell peppers, onions, tomatoes, mushrooms, and spinach.
- Season the scramble well: Don't be shy with the seasonings! Salt, pepper, garlic powder, and chili powder are all good options. You can also add a splash of hot sauce if you like things spicy.
- Cook the scramble over medium heat: This will help to prevent the eggs from overcooking and becoming rubbery.
- Don't overcook the scramble: The eggs should be cooked through, but they should still be slightly runny in the center. This will give the scramble a creamy texture.
- Serve the scramble immediately: Corn tortilla and egg scramble is best served hot and fresh.
Conclusion:
Corn tortilla and egg scramble is a quick, easy, and delicious breakfast that is perfect for busy mornings. It is also a great way to use up leftover corn tortillas.
