Tips:

  • For a crispy cornbread topping, use a cast iron skillet. If you don't have a cast iron skillet, you can use a regular baking dish, but the cornbread will not be as crispy.
  • Make sure the ground beef is cooked through before adding it to the skillet. You can check this by using a meat thermometer to make sure the internal temperature has reached 160 degrees Fahrenheit.
  • If you don't have any frozen corn on hand, you can use fresh corn. Just remove the kernels from the cob and cook them in a little bit of butter until they are tender.
  • Add a can of diced tomatoes to the skillet for a more flavorful filling.
  • Serve the cornbread and beef skillet pie with a side of sour cream or salsa.

Conclusion:

Cornbread and beef skillet pie is a delicious and easy-to-make meal that is perfect for a weeknight dinner. It is a great way to use up leftover ground beef and corn, and it can be easily customized to your liking. With a few simple ingredients, you can have a hearty and satisfying meal on the table in no time.
