Steps:
- Working with half of the bag at a time, chop the coleslaw mix into 1/8-inch pieces (about the width of the carrots). Transfer to a large bowl. Dice enough of the onion into 1/8-inch pieces to yield 1/4 cup. Transfer to a fine-mesh strainer and rinse with cold water for 1 minute to soften the flavor. Gently wring out the onions in a paper towel and then stir into the coleslaw mix.
- In a pint jar or other container with a tight-fitting lid, stir together the sugar and 3 tablespoons water until the sugar dissolves a bit. Add the mayonnaise, vinegar, mustard powder, paprika and 1/2 teaspoon salt, put on the lid and shake vigorously until completely combined. Stir the dressing into the coleslaw, then set aside for 10 minutes to marinate and soften, stirring a few times. Add more salt, if needed. The coleslaw will keep, covered in the refrigerator, for up to 1 day.

Tips:
- For the best flavor, use fresh, high-quality ingredients. Organic chicken, crisp cabbage, and tangy mayonnaise are all essential.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
- To make the chicken extra crispy, double-coat it in the flour mixture before frying.
- Be careful not to overcrowd the pan when frying the chicken. This will cause the chicken to steam instead of fry, resulting in soggy chicken.
- Use a sharp knife to thinly slice the cabbage for the coleslaw. This will help the dressing to evenly coat the cabbage.
- For a creamier coleslaw, add an extra 1/4 cup of mayonnaise.
- To make the coleslaw ahead of time, mix the cabbage and dressing together and then refrigerate for at least 30 minutes before serving. This will allow the flavors to meld.
Conclusion:
Country chicken and coleslaw is a classic comfort food dish that is easy to make and always a crowd-pleaser. With its crispy chicken, tangy coleslaw, and creamy dressing, this dish is sure to be a hit at your next potluck or gathering. So next time you're looking for a delicious and satisfying meal, give country chicken and coleslaw a try!
