12 large potatoes, peeled and diced
8 ounces Velveeta, cubed
1 large onion, finely chopped
1 large green pepper, chopped
1 jar (2 ounces) diced pimientos, drained
1 slice bread, torn into crumbs
3 tablespoons minced fresh parsley, divided
1/2 teaspoon salt
1/2 cup 2% milk
1/2 cup butter, melted
1-1/2 cups cornflakes, crushed

Steps:

  • Place the potatoes in a large saucepan or Dutch oven and cover with water. Bring to a boil; reduce heat to medium. Cover and cook for 5-7 minutes or until tender; drain. 1 teaspoon salt
1/2 cup bacon, diced
1/2 cup onion, diced
1 1/2 teaspoons cornstarch or 1 1/2 teaspoons flour
4 teaspoons sugar

1/4 teaspoon pepper
1/4 cup cider vinegar
1/2 cup water
1/4 cup onion, minced
2 tablespoons fresh parsley, snipped
1 teaspoon celery seed

  • Cook potatoes, in boiling water and 1 teaspoon salt, until tender, about 35 minutes.

1/2 lemon, juice
