2 medium mangoes, peeled and thinly sliced
2 medium ripe avocados, peeled and thinly sliced

1/4 cup fresh cilantro leaves

1/4 cup mayonnaise
2 Tbsp. Dijon mustard
2 tsp. lemon juice
1 tsp. hot sauce
1 tsp. salt, to taste
1 tsp black pepper, to taste
1 small shallot, finely diced
1/2 cup bell pepper (mix of green, red and yellow), finely diced
1 lb. jumbo lump crab meat
1 1/2 cup Panko breadcrumbs
4 Tbsps. olive oil, divided
Radicchio lettuce leaves, cleaned
Mixture of baby greens
Spring Onions, diced
Lemon wedges, to garnish
Caper Remoulade

Steps:

  • In a large mixing bowl, combine the egg, mayonnaise, mustard, lemon juice, hot sauce, and salt and pepper together until mixed well.
  • Add the shallots, bell peppers, crab meat, and breadcrumbs to the mayonnaise mixture until combined.
  • Form into patties (about 4 - 6 depending on size), at this point you can cover and chill for 1 hour or up to overnight if preferred.

2 stalks celery
1 tablespoon finely minced onion
4 ounces cream cheese, softened
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons sugar (or two packets sugar substitute)
6 hard-boiled eggs, cooled
1/2 head lettuce (or spinach, Swiss chard, greens combined)
10 flour tortillas
