BAKED CRAB DIP WITH OLD BAY AND RITZ CRACKERS

Baked Crab Dip With Old Bay and Ritz Crackers image

This crab dip is inspired by a recipe called "ritzy dip" from the "Three Rivers Cookbook," a Pittsburgh community cookbook published in 1973, in which canned crab is mixed with cream cheese, topped with Ritz crackers and baked. Fresh lump crab meat is the star in this updated version, with lemon juice, scallions and plenty of Old Bay seasoning to spice things up. This recipe doubles easily for larger groups, and the whole thing can be assembled and refrigerated up to a day in advance before being baked.

Tips:

  • Fresh is best: For the best flavor, use fresh crab meat. If you can't find fresh crab meat, frozen crab meat is a good alternative. Just be sure to thaw it completely before using.
  • Don't overcook the crab: Crab meat is delicate and can easily be overcooked. Be careful not to cook it for too long, or it will become tough and rubbery.
  • Use a good quality cream cheese: The cream cheese is one of the main ingredients in crab dip, so it's important to use a good quality one. Look for a cream cheese that is smooth and creamy, without any lumps.
  • Add some flavor: Crab dip is a versatile dish that can be flavored in many different ways. Some popular additions include Old Bay seasoning, lemon juice, and Worcestershire sauce. You can also add some chopped vegetables, such as onions, celery, or bell peppers.
  • Serve it warm: Crab dip is best served warm. You can either serve it immediately after making it, or you can store it in the refrigerator for later. If you're storing it in the refrigerator, be sure to reheat it before serving.
