PENNE WITH CREAMY TOMATO TUNA SAUCE

Penne with Creamy Tomato Tuna Sauce image

This is my absolute favourite pasta dish and it's very easy if you make the tomato sauce ahead of time. Don't substitute for the homemade tomato sauce; it's not nearly as good with canned.

Number Of Ingredients 15

6 ounces Whole wheat penne
1 tablespoon olive oil
1 clove Garlic
5 large Sun-dried tomatoes chopped
7 large Oil-cured black olives pitted
1 85-gram tin Tuna drained
1/4 cup 5% cream
1 cup Homemade tomato sauce

4 tablespoons Extra Virgin Olive Oil
1 28-oz can Crushed tomatoes
1/4 teaspoon Dried chiles crushed
5 leaves Fresh basil torn
Salt to taste

Steps:

  • TOMATO SAUCE This makes approximately 3 cups. I make it ahead and freeze it in 1 cup quantities perfect for this recipe. Heat olive oil over medium heat. Add onion garlic and chiles and saute gently until onion is soft. Add tomatoes and simmer on low for about 10 minutes. Add salt and basil leaves and stir to combine. PASTA Cook penne according to package instructions for al dente. Heat oil over medium heat and add garlic, sun-dried tomatoes and olives. Cook until garlic is golden. Add tomato sauce, mix to blend well and heat through. Break tuna into chunks and add to sauce. Cook for about one minute more. Keep sauce warm. When penne is just about done, add cream to sauce and stir until it is well absorbed. Don't allow the sauce to boil at this point. Drain penne and add to sauce mixing well. PASTA WITH TUNA AND TOMATO CREAM SAUCE

Pasta With Tuna and Tomato Cream Sauce image

I actually found this at the foot of the page, under the Cooking Channel site. The recipe is courtesy of chef David Rocco. The cream in the sauce seems to mellow the tuna and tomatoes -- it's my favorite pasta sauce with tuna. Really delicious and pretty with butterfly pasta.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

2 tablespoons olive oil, approximately
1 garlic clove
8 sun-dried tomatoes, large chopped (I used bottled, drained)
12 black olives, pitted (about 1/4 cup)
7 ounces canned tuna, drained
2 cups marinara sauce
1/2 cup cream
2 tablespoons flat leaf parsley, chopped fine
12 ounces pasta, such as penne or 12 ounces farfalle pasta, cooked al dente

Steps:

  • Note: I make my marinara with a bit of olive oil, garlic, canned tomato puree, a bit of Tobasco, basil, salt and pepper. It went great with this recipe.
  • Heat the oil in a frying pan. Add the garlic, sun-dried tomatoes and black olives. Cook a bit. Pour in the marinara sauce and cook for a few minutes. Add the tuna to the sauce. Cook for another minute. Add the cream and cook on high heat until the sauce is hot but not boiling. Add the pasta and finish cooking directly in the sauce. Sprinkle the dish with the parsley. Serve immediately. Buon appetito!

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be.
  • Don't overcrowd the pan: When searing the tuna, make sure to give it enough space so that it can brown evenly.
  • Cook the pasta al dente: This means that it should be cooked through but still have a slight bite to it.
  • Add the tuna and sauce to the pasta just before serving: This will help to prevent the tuna from overcooking.
  • Garnish with fresh herbs: Fresh basil or parsley are both great options.
