GOOD NEW ORLEANS CREOLE GUMBO

Good New Orleans Creole Gumbo image

I am going to give you my gumbo recipe. I learned to cook from my mother and grandmother who were born and raised in New Orleans and really knew how to cook. Most of the time, you could not get them to write down their recipes because they used a 'pinch' of this and 'just enough of that' and 'two fingers of water,' and so on. This recipe is a combination of both of their recipes which I have added to over the years. Serve over hot cooked rice. The gumbo can be frozen or refrigerated and many people like it better the next day. Bon appetit!

Time 3h40m

Yield 20

Number Of Ingredients 24

1 cup all-purpose flour
¾ cup bacon drippings
1 cup coarsely chopped celery
1 large onion, coarsely chopped
1 large green bell pepper, coarsely chopped
2 cloves garlic, minced
1 pound andouille sausage, sliced
3 quarts water
6 cubes beef bouillon
1 tablespoon white sugar
salt to taste
2 tablespoons hot pepper sauce (such as Tabasco®), or to taste
½ teaspoon Cajun seasoning blend (such as Tony Chachere's®), or to taste
4 bay leaves
½ teaspoon dried thyme leaves
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tomato sauce
4 teaspoons file powder, divided
2 tablespoons bacon drippings
2 (10 ounce) packages frozen cut okra, thawed
2 tablespoons distilled white vinegar
1 pound lump crabmeat
3 pounds uncooked medium shrimp, peeled and deveined
2 tablespoons Worcestershire sauce

Steps:

  • Make a roux by whisking the flour and 3/4 cup bacon drippings together in a large, heavy saucepan over medium-low heat to form a smooth mixture. Cook the roux, whisking constantly, until it turns a rich mahogany brown color. This can take 20 to 30 minutes; watch heat carefully and whisk constantly or roux will burn. Remove from heat; continue whisking until mixture stops cooking.
  • Place the celery, onion, green bell pepper, and garlic into the work bowl of a food processor, and pulse until the vegetables are very finely chopped. Stir the vegetables into the roux, and mix in the sausage. Bring the mixture to a simmer over medium-low heat, and cook until vegetables are tender, 10 to 15 minutes. Remove from heat, and set aside.
  • Bring the water and beef bouillon cubes to a boil in a large Dutch oven or soup pot. Stir until the bouillon cubes dissolve, and whisk the roux mixture into the boiling water. Reduce heat to a simmer, and mix in the sugar, salt, hot pepper sauce, Cajun seasoning, bay leaves, thyme, stewed tomatoes, and tomato sauce. Simmer the soup over low heat for 1 hour; mix in 2 teaspoons of file gumbo powder at the 45-minute mark.
  • Meanwhile, melt 2 tablespoons of bacon drippings in a skillet, and cook the okra with vinegar over medium heat for 15 minutes; remove okra with slotted spoon, and stir into the simmering gumbo. Mix in crabmeat, shrimp, and Worcestershire sauce, and simmer until flavors have blended, 45 more minutes. Just before serving, stir in 2 more teaspoons of file gumbo powder.

BEST CREOLE SHRIMP AND OKRA GUMBO

Best Creole Shrimp and Okra Gumbo image

This is a really tasty gumbo that is also easy to make. For more authentic taste you can add 1/4 cup of Gumbo Filé Powder spice before you serve. I hope you get to enjoy this as much as we do! Note: If this is too mild for your taste you can add some hot sauce as you serve. I made this for my 1 year old and I had to cut down on the spice.

CREOLE REDFISH GUMBO

Creole Redfish Gumbo image

Jordan Ruiz cooks a version of the seafood gumbo his mother and grandmother made when he was growing up in New Orleans' Gentilly neighborhood. It contains fin fish, which is rarely seen in restaurants in New Orleans, where seafood gumbos tend to contain shrimp and crab. Gumbo filé, made of dried and ground sassafras leaves, is used both as a thickening agent and for its flavor. Mr. Ruiz's gumbo can be found at the Munch Factory, the New Orleans restaurant he owns with his wife, Alexis.

Time 2h15m

Yield 4 to 6 servings

Number Of Ingredients 21

1 1/2 cups vegetable or canola oil
1 3/4 cups all-purpose flour
1 large yellow or white onion, chopped
1 cup chopped green bell pepper
1 cup chopped celery
1/3 cup chopped garlic
3 quarts shrimp stock or seafood stock
1 pound small blue crabs, or substitute 1/2 pound fresh lump crab meat
1/4 cup gumbo filé powder
6 dried bay leaves
2 tablespoons kosher salt
1 tablespoon fresh or dried thyme
1 tablespoon Worcestershire sauce
1 tablespoon ground cayenne, or to taste
2 pounds small or medium shrimp, peeled and deveined, tails removed
1 1/2 pounds redfish, black drum or other medium-firm, white-flesh fish fillets (such as sea bass or haddock), skin removed, cut into bite-size pieces
2 tablespoons Creole seasoning (such as Tony Chachere's)
2 cups freshly shucked oysters with their juices, or substitute 1 (16-ounce) container shucked oysters
1 teaspoon hot sauce (such as Tabasco)
Cooked white rice, for serving
1/2 cup chopped scallions, for serving

Steps:

  • Prepare the roux: In a large pot, heat the oil over medium-high until it's just shy of smoking. Slowly shake the flour into the oil, whisking until smooth. Reduce the heat to medium and continue whisking until the roux is a deep dark brown, 20 to 30 minutes, adjusting the heat as necessary to prevent burning.
  • Using a wooden spoon, stir in the onion, bell pepper, celery and garlic. Cook another 10 minutes, stirring constantly.
  • Stir in the stock. Bring to a boil and add the crabs (if using whole blue crabs), gumbo filé, bay leaves, salt, thyme, Worcestershire sauce and cayenne. Reduce the heat to medium-low and simmer until the flavors have melded, skimming off any foam or skin on the surface, about 1 hour.
  • Toss the shrimp and fish with the Creole seasoning and stir into gumbo, along with the oysters and crab meat (if using). Simmer until the shrimp and fish are cooked, about 10 minutes. Add the hot sauce. Taste and season with more salt and hot sauce if necessary. Divide among soup bowls and top with rice and scallions.

CHICKEN AND ANDOUILLE SMOKED SAUSAGE GUMBO (CREOLE STEW)

Chicken and Andouille Smoked Sausage Gumbo (Creole Stew) image

Provided by Food Network

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

1 cup finely chopped onion
1 cup finely chopped green bell pepper
2 pounds okra, chopped
3/4 cup finely chopped celery
1 1/4 cups flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground red pepper
Vegetable oil
1 1/2 quarts chicken stock
1 cup chopped tomatoes
2 cups tomato juice
1 tablespoon file powder
1/2 pound andouille sausage
1 teaspoon minced garlic
Cooked rice, for serving

Steps:

  • In a bowl, combine the onions, bell peppers, okra and celery; set aside.
  • Combine all but 1/2 cup of the flour, the salt, garlic powder, and red pepper in a plastic bag, add the chicken pieces and shake until chicken is well coated. In large heavy skillet heat 1 1/2-inches of oil until very hot (375 degrees F.) Fry the chicken until the crust is brown on both sides and meat is cooked, about 5 to 8 minutes per side; drain on paper towels.
  • Remove the pan from the heat and pour the hot oil into a cup, leaving as many brown particles in the pan as possible. Scrape the bottom of the pan with a wooden spoon to loosen any stuck particles, then return 1/2 cup of the hot oil to the pan. Place the pan over high heat. Using a long handled whisk, gradually stir in remaining flour. Cook, whisking constantly, until a roux is formed and is a dark red-brown. Remove from heat and add the reserved vegetable mixture, stirring constantly until the roux stops getting darker. Return to a low heat and cook until the vegetables are soft.
  • In a separate large pot, bring the chicken stock to a boil. Add the roux by spoonfuls to the boiling stock, stirring between each addition. Reduce to a simmer and add the andouille and remaining ingredients, except file powder. Simmer for 45 minutes. While gumbo is simmering, bone the cooked chicken and cut meat into 1/2-inch dice. Add to the gumbo. Add file powder 5 minutes before serving and continue to simmer for 5 minutes.
  • Serve gumbo on a mound of cooked rice.

  • Add 1 quart reserved stock in a slow, steady stream while stirring vigorously.

CREOLE GUMBO

Creole Gumbo image

Leah Chase, the chef and owner of Dooky Chase in New Orleans, gave an interview to Matt Lee and Ted Lee of The Times back in 2000. It was about her gumbo, which is brackish and silky and delicious, and for which she offered a recipe. Ms. Chase told them about giving a dinner in 1942 for a group of Tuskegee Airmen who refused to eat the gumbo she and a friend had prepared for them because they thought the file powder she put in the pot was a voodoo potion intended to ensnare the men. "One of the men was telling the others, 'Don't eat the gumbo! If you eat that gumbo, you'll never leave New Orleans.' " Perhaps! (Sam Sifton)

Time 2h30m

Yield 6 to 8 servings

Number Of Ingredients 19

1 pound medium head-on shrimp
4 hard crabs, cleaned and split in two
1/2 pound smoked sausage, diced
1/2 pound hot sausage, diced
1/2 pound beef brisket or lean veal stew meat
1/2 pound chicken gizzards
1/2 cup canola oil
1/2 cup flour
1 large onion, chopped
6 chicken wings, split
1/2 pound smoked ham, cubed
2 teaspoons paprika
3 cloves garlic, minced
1 teaspoon dried thyme
3 bay leaves
1 teaspoon salt
24 shucked oysters with liquor
1 tablespoon file powder
1/2 cup chopped parsley

Steps:

  • Peel and devein shrimp. Place heads and shells in stockpot with 12 cups water, and simmer over low heat until needed.
  • In a 6-quart stockpot, combine crabs, sausages, beef or stew meat and gizzards; cook, stirring occasionally to prevent scorching, over low flame for 30 minutes.
  • In a heavy-bottomed saute pan, whisk oil and flour together over low to moderate heat, and cook, whisking constantly until golden brown, about 20 minutes. Add onions, and cook, stirring, until soft. Pour mixture into pot with meats, and stir gently until well combined. Strain shrimp stock. Add to pot with enough water to make 14 cups liquid. Bring to a boil. Add chicken wings, smoked ham, paprika, garlic, thyme, bay leaves and salt, and simmer 30 minutes. Add peeled shrimp, and simmer 10 minutes. Add oysters, and turn off heat. Tips:

  • Choose your protein: Gumbo can be made with a variety of proteins, including chicken, shrimp, sausage, or a combination of all three. If you're using chicken, be sure to brown it well before adding it to the gumbo. This will help to develop flavor.
  • Use a good roux: The roux is the base of the gumbo, and it's important to make it correctly. Be sure to cook the flour and oil together over medium heat, stirring constantly, until the roux is a deep brown color. This will give the gumbo a rich, flavorful base.
  • Add the vegetables: Once the roux is ready, add the vegetables. This typically includes onions, celery, and bell peppers. Cook the vegetables until they are softened, but not mushy.
  • Add the stock: Once the vegetables are cooked, add the stock. You can use chicken stock, shrimp stock, or a combination of both. Bring the stock to a boil, then reduce heat and simmer for about 30 minutes.
  • Add the protein: Once the stock has simmered, add the protein. If you're using chicken, shrimp, or sausage, cook it until it is cooked through. If you're using a combination of proteins, add them in stages, starting with the chicken and ending with the shrimp.
  • Add the seasonings: Once the protein is cooked, add the seasonings. This typically includes salt, pepper, garlic powder, onion powder, and cayenne pepper. You can also add other seasonings to taste, such as paprika, thyme, or oregano.
  • Simmer: Once the seasonings are added, bring the gumbo to a boil, then reduce heat and simmer for about 30 minutes. This will allow the flavors to meld together.
  • Serve: Gumbo is typically served over rice. You can also serve it with cornbread or French bread.

Conclusion:

Gumbo is a delicious and versatile dish that can be made with a variety of ingredients. By following these tips, you can make a gumbo that is sure to please everyone at your table. So what are you waiting for? Start cooking today!
