SHAVED CELERY ROOT SALAD WITH MACKEREL
A vegetable peeler is the only tool you need to create this dish. Celery root has an earthy, mellow charm (somewhere between celery and parsley), but fennel would work nicely here, too.

CELERY ROOT SALAD
This is one of my favorite winter salads. I often make a large bowl and store it in the fridge because the salad keeps well and intensifies in flavor over time. If you like, you can top the salad with chopped parsley.

CRISP CELERY ROOT RADISH SALAD
My mom calls this "salatka swiateczna" ("Holy Salad"). It uses leftovers from Easter (eggs, horsedarish, sour cream, etc.) and tastes amazing; very fresh and crisp! It has a strong, bold flavor and is very good with a meat dinner like pot roast or steak.

Steps:
- If you are using horseradish from a jar, let it sit in a strainer to get out the excess water. If you are using fresh horseradish, wash and peel it, and grate it.
- Peel celery root and wash it very well. Pat it dry and then shred it into medium strips using the medium-size side of a vegetable shredder.
- Wash and shred radishes into the same bowl as the celery root.
- Peel eggs and mash them in a bowl using a fork. Add to radishes and celery root.
- Add in the mayo, sour cream, horseradish, chives, salt and pepper. Mix, but not too vigorously so the ingredients don't all mash together. Taste it and adjust salt and pepper levels. This is a very good side salad to have with a heavy meat dish. Enjoy!
Tips:
- Choose the right celery root and radishes: Look for firm, unblemished celery root and radishes with smooth skin. Avoid any that are soft, wrinkled, or have blemishes.
- Peel and grate the celery root and radishes finely: This will help them absorb the dressing better and make the salad more flavorful.
- Use a sharp knife to slice the celery root and radishes: This will help prevent them from tearing and bruising.
- Make the dressing ahead of time: This will allow the flavors to meld and develop.
- Toss the salad gently: Over-mixing can bruise the celery root and radishes.
- Serve the salad immediately: This is best enjoyed fresh.
Conclusion:
This crisp celery root and radish salad is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your taste preferences. With its combination of textures and flavors, this salad is sure to be a hit at your next gathering.
