Yield 4 to 6 servings

Number Of Ingredients 12

3 potatoes, peeled and grated
1/2 pound clarified butter
Salt and pepper
1 pound smoked salmon, thinly sliced
3 shallots, minced
5 sprigs fresh dill, chopped
1/2 cup creme fraiche or sour cream
1 lemon, juiced
Pinch black pepper
1 tablespoon olive oil
1/2 bunch fresh chives, chopped
3 ounces caviar

Steps:

  • Toss grated potatoes in 1/4 pound clarified butter. Season with salt and freshly ground pepper.

Lightly brush smoked salmon with olive oil, then sprinkle with black pepper and remaining lemon juice. Cut galettes into desired portions and garnish with caviar and chopped chives. Categories     Breakfast, Brunch

Time 40m

Number Of Ingredients 8

3 medium potatoes , quartered
100g flour , plus extra for dusting
½ tsp baking powder
150g pack full-fat soft cheese
200g pack smoked salmon
half a small red onion , thinly sliced
1 tbsp caper , drained
zest 1 lemon

Steps:

  • Make the potato cakes. Bring a large pan of salted water to the boil. Tip in the potatoes and cook for 10-15 mins until soft. Drain well, then return to the hot pan for 1-2 mins to allow any excess moisture to evaporate. Pass the potatoes through a ricer or sieve to get a really fine mash.
  • Weigh out 250g of the mash and place in a bowl (you shouldn't have much left over). Tip in the flour, baking powder and 1 tsp salt. Mix together until the mixture forms a soft dough. Shape into a ball, then tip out onto a lightly floured surface. Roll out into a circle about 20cm across and 1cm thick. Cut into 8 triangular wedges and generously dust all over with flour. The potato cakes can be made up to this point 1 day ahead and chilled or frozen for up to 1 month.
  • Set a large, non-stick frying pan over a medium heat (no need to add oil). When hot, dry-fry the cakes for about 3-5 mins on each side until golden and cooked through. You may have to do this in batches. Stir a little water into the soft cheese until it is spoonable. Place the potato cakes on plates, top with dollops of soft cheese and a smoked salmon slice, then scatter over the red onion, capers and lemon zest to finish.

Tips:

  • Use a combination of russet and Yukon Gold potatoes for the best texture and flavor.
  • Shred the potatoes by hand using a box grater or food processor fitted with the shredding disk. This will give you more control over the size and consistency of the shreds.
  • Be sure to squeeze out as much excess moisture from the potatoes as possible. This will help the potato cakes to hold their shape and prevent them from becoming soggy.
  • Season the potato cakes generously with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or dried herbs.
  • Cook the potato cakes in a hot skillet with plenty of oil. This will help them to form a crispy crust and prevent them from sticking to the pan.
  • Serve the potato cakes immediately with your favorite toppings. Some popular options include smoked salmon, chives, sour cream, and dill.

Conclusion:

These crispy potato cakes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking. So next time you are looking for a quick and easy meal, give these potato cakes a try!
