1/4 c white vinegar
1/4 c brown sugar, firmly packed

Steps:

  • 1. Place chicken in Crock Pot. (I throw mine in frozen and it works amazingly. You don't even need to break them apart!)

I love my crock pot. It sure makes life easier for me since I started using it. I just wish I had started when I got it. It was a gift from my daughter and her hubby and I let it sit in my pantry for 5 or 6 years before I ever tried to cook in it because I figured I didn't know how to use it. But it is so easy and so convenient. If you have one sitting around, USE IT! You will love it.

CROCK POT BBQ PULLED CHICKEN

Categories     Sandwich     Chicken

Yield 7 servings

Number Of Ingredients 7

1 1/2 lb. raw boneless skinless lean chicken breasts, halved
1 cup canned tomato sauce
1/2 cup ketchup
2 tbsp. plus 2 tsp. brown sugar (not packed)
2 tbsp. plus 2 tsp. cider vinegar
2 tsp. garlic powder
Optional: red pepper flakes, to taste

Steps:

  • Place all ingredients except the chicken in the crock pot. Stir until mixed. Add chicken and coat well with the sauce. Cover and cook on high for 3 - 4 hours OR on low for 7 - 8 hours, until chicken is fully cooked. Remove all the chicken and place it in a bowl. Shred each piece using two forks -- one to hold the chicken in place and the other to scrape across the meat and shred it. Return the shredded chicken to the crock pot, and mix well with the sauce. If you're serving a group, keep the crock pot on its lowest setting, so the chicken stays warm. If you like, season to taste with red pepper flakes. Eat up!

Tips:

  • Use boneless, skinless chicken breasts or thighs for a quick and easy meal.
  • Add a variety of vegetables to your crock pot, such as onions, carrots, celery, or potatoes, for a complete meal.
  • Use your favorite BBQ sauce or make your own from scratch.
  • Cook the chicken on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.
  • Serve the chicken with rice, mashed potatoes, or your favorite side dish.
