This came out of desperation one day when I hadn't planned anything for dinner and only had half defrosted some pork chops. I just layered everything in the crockpot and 6 hours later we had dinner! It's very simple, very few ingredients and we thought it was very tender and tasty. I hope you enjoy!

1 (16 ounce) bottle of your favourite barbecue sauce (I use Honey Smoke)
6 pork chops (you can use boneless or bone in)
seasoning (I use Garlic Plus by Club House)

Steps:

  • Turn crockpot on high and remove liner (if you can). Spread some BBQ sauce on the bottom of the crock.
  • Run each chop under some warm water.
  • Put 2 chops on the bottom of the crock. Put some BBQ sauce and seasonings on each chop Layer chops, sauce and seasonings. Add the remaining sauce over the top.
  • Return the crock to the pot, put on lid.
  • After about an hour, turn down to low. Cook for about 5-6 hours. If you used bone-in chops, be careful as the chops are very tender and will fall off the bone.
  • We usually have ours with mashed potatoes, or throw some potatoes in the oven and bake them for the last hour or so.
  • It would probably work well with rice too if you want.

1 1/2 lbs pork chops (each 6oz. 1/2-inch thick)
1 tablespoon cooking oil
1 large onion, coarsely chopped
1 large bell pepper, coarsely chopped
1 large sweet potato, thickly sliced
1 tablespoon tapioca
1/2 cup barbecue sauce
1/4 cup frozen apple juice concentrate, undiluted
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder

Steps:

  • Trim excess fat from chops.
  • In large skillet heat oil and brown both sides of chops.
  • Put onions, bell peppers in bottom of crock pot, sprinkle with tapioca, layer sweet potato slices over veggies, top with pork chops.
  • Mix together remaining ingredients in small bowl, pour over chops, cover crock pot, cook on low setting 6-8 hours til meat is tender.

1/2 cup brown sugar
2 cups ketchup
2 tablespoons onion powder
1 tablespoon garlic powder

  • Combine all ingredients in a bowl except for pork chops.
  • Stir until well mixed.

An easy way to have a great meal and a great smelling house as it cooks while you are out. I have used half frozen chops in a pinch by just briefly defrosting in the microwave. The sauce is great if you make it the night before but is almost as good made the day of - just don't forget the smoke to give it a great BBQ flavour. You can also brown the chops the night before so you only have to spend 1 minute getting your chops ready to go in the crock pot the day that you are cooking. I like to serve these chops over rice with veggies on the side. I'm sure that this would work great with a pork roast or tenderloin, beef or chicken. Enjoy!

1 1/2 cups Heinz ketchup
1 teaspoon liquid smoke, hickory flavour preferred
1/2 teaspoon paprika, smoked preferred
1/3 cup brown sugar, packed
2 garlic cloves, minced (1 tsp.)
1 teaspoon black pepper, freshly ground
4 boneless pork loin chops, at least 1 inch thick
2 teaspoons seasoning salt (or to taste)
1 teaspoon black pepper, freshly ground (or to taste)
2 teaspoons olive oil

Steps:

  • Mix the sauce ingredients in a bowl. Cover and refrigerate if made the night before.
  • Heat oil over medium heat in frying pan.
  • Season the chops with the seasoning salt and pepper and add to pan. Brown chops for 3 minutes on each side. Cover and refrigerate if made the night before.
  • Add chops to crock pot. Cover with sauce and cook on low for 5 hours, 6-7 hours if mostly frozen. These times work great in my crock pot but your's may be hotter or cooler. That's why I like crock pots, it's hard to overcook!
