Steps:
- Cook onion, butter, garlic, celery and sausage in a frying pan until onion is tender, about 5 minutes.
- Add all ingredients, except tomatoes and cornstarch, to the crockpot. Cook 4-5 hours on high or 8 hours on low or until potatoes are tender.
- Stir in tomatoes with juices and cornstarch and cook 10 minutes more.
- Discard bay leaf and season with salt & pepper to taste. Serve with sour cream if desired.

Steps:
- Brown sausage and onion in a skillet. Drain well.
- Place potatoes, celery and carrot in bottom of crock pot. Add sausage and onion mixture. Pour chicken broth over vegetables and sausage.
- Turn crock pot to low and cook 4 to 5 hours.
- During the last 5 minutes of cooking add evaporated milk and cheddar cheese. Do a taste test for salt and pepper and add, if needed.
- Note: If a thicker soup is desired, add -- 1 tablespoon of cornstarch dissolved in 2 tablespoons of cold water.
- Serve and enjoy!

- Pour chicken broth in crock pot.
- Add can of mushroom soup and mix well with broth.
- Peel and dice potatoes, add to crock pot.
- Dice onion and saute in skillet with butter until soft.
- Slice smoked sausage and then quarter.
- Add to onion.
- Cook until smoked sausage is hot.
- Add to crock pot.
- Cook on high for 4 hours.
- Before serving, lower heat and add milk and cheese. Stir in cheese until melted.
- Mix cornstarch with a small amount of water. Mix until smooth. Add to soup to help thicken.
