1 pound red-skinned potatoes, diced
2 carrots, thinly sliced
2 stalks celery, thinly sliced
1/2 white onion, diced
2 cloves garlic, minced
12 sprigs dill, plus chopped leaves for topping
12 sprigs parsley
6 sprigs thyme
2 bay leaves
1 wide strip lemon zest
1 pound salmon fillet (preferably wild), skin removed, cut into 4 pieces
Kosher salt and freshly ground pepper
1/2 cup heavy cream
Chopped fresh chives, for topping

Steps:

  • Put the clam juice in a medium microwave-safe bowl and microwave until very hot, about 5 minutes.
  • Meanwhile, scatter the potatoes, carrots, celery, onion and garlic in a 6-quart slow cooker. Tie the dill, parsley, thyme, bay leaves and lemon zest together with twine and add to the slow cooker. Pour in the hot clam juice; cover and cook on high, 3 1/2 hours.
  • Season the salmon with 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Stir the heavy cream into the vegetables in the slow cooker, then partially submerge the salmon in the liquid. Cover and cook 30 more minutes.

1 onion, chopped

6 cups chicken stock
1 cup fresh corn kernels
2 large potatoes, diced

1 cup scallops
1 cup uncooked medium shrimp, peeled and deveined

5 cups water
1 cup chopped red onions (I used a small French Pink onion) or 1 cup yellow onion, minced (I used a small French Pink onion)
1 frozen boneless skinless chicken thighs
1/4 cup mayonnaise (I use Vegenaise, which is non-dairy)
1 (1 1/3 ounce) package knorr recipe classics leek soup mix
1 garlic clove, minced
6 ounces skinned and de-boned salmon fillets, cubed
1/2 cup converted rice
1 cup o'brien frozen potatoes or 1 cup cubed fresh peeled potato
1/4 teaspoon dried basil
salt & freshly ground black pepper, to taste

Steps:

  • Add the water, chopped onion, and frozen chicken thigh to the crock pot and turn on high; cook for 3 hours.
  • Remove about 3/4 of the cooked onion and the chicken thigh from the liquid.
  • Cut the cooked chicken into small cubes; set aside.

1/2 cup each chopped celery, onion and green pepper
1 garlic clove, minced
3 tablespoons butter
1 can (14-1/2 ounces) chicken broth
1 cup uncooked diced peeled potatoes
1 cup shredded carrots
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 to 3/4 teaspoon dill weed
1 can (14-3/4 ounces) cream-style corn
2 cups half-and-half cream
