A hearty and savory quiche without the crust. Don't count calories with this one. Make sure to use the real ingredients to assure the great flavors. Substitute bacon for the sausage if desired.

1 pound ground pork sausage
½ cup minced onion
½ cup minced green bell pepper
1 (16 ounce) container sour cream
1 ½ cups shredded sharp Cheddar cheese
1 cup shredded Swiss cheese
½ teaspoon garlic powder
¼ teaspoon hot pepper sauce (such as Tabasco®)
salt and ground black pepper to taste
4 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 7x11-inch baking dish.
  • Heat a large skillet over medium-high heat and stir in ground sausage. Cook and stir until sausage is crumbly and evenly browned, 5 to 10 minutes. Remove sausage from skillet and drain all but 2 tablespoons of drippings.
  • Cook and stir onion and bell pepper in the reserved drippings until softened, 5 to 10 minutes.
  • Mix sausage, onion, bell pepper, sour cream, Cheddar cheese, Swiss cheese, garlic powder, hot pepper sauce, salt, and black pepper together in a bowl; mix in beaten eggs until incorporated. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven until edges are golden brown and center is set, 50 to 55 minutes. Allow to cool 10 minutes before serving.

This delicious quiche recipe was born out of a need for breakfast foods during my husbands latest diet plan. Though it has some carbs from the various veggie mix I added, there is far less than in a traditional breakfast that would have say potatoes as a side. This dish is a stand alone: no sides needed. A tasty blend of eggs, cheeses, veggies and meats, this is hearty meal!

8 large eggs
8 meatballs (precooked frozen Italian-style thawed and diced)
8 slices packaged ham, chopped
1 onion, chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
2 tablespoons vegetable oil
1/4 cup chopped yellow bell pepper
1/4 cup chopped orange bell pepper
3/4 cup milk
1 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese, finely grated
2 teaspoons sriracha sauce
2 tablespoons stone ground mustard
2 tablespoons parsley
4 tablespoons minced garlic
1/4 teaspoon chili flakes
1 teaspoon turmeric
1 pinch salt
1 pinch pepper

Steps:

  • Preheat oven to 350-degrees F.
  • Spray 2 8-inch pie plates with Pam.
  • Heat oil in skillet over med. high heat. add mushrooms; saute for 5 minutes.
  • Add onion saute until browned (additional 5 min).
  • Add spinach, bell peppers, carrot, chopped meatballs and chopped ham ; cook until excess moisture evaporates. Let cool.
  • Beat eggs in large bowl. Add milk, cheeses, Sriracha sauce, stone ground mustard, parsley, minced garlic, chili flakes, turmeric and .salt and pepper to taste.
  • Stir egg-cheese mixture into veggie-meat mixture. Season to taste with salt and pepper, if desired.
  • Shovel into pie pans, spreading evenly.
  • Bake until top is golden brown and a toothpick comes out clean, 40-45 minutes.

2 tablespoons unsalted butter
3 Belgian endive, cleaned and minced
salt
freshly ground white pepper
1 cup fresh crabmeat
3 large eggs
3/4 cup all-purpose flour
2 cups milk
1 dash hot sauce

Steps:

  • in a large skillet, melt butter over high heat.
  • Add endive, with salt and pepper to taste, and sauté for 4 minutes.
  • Remove from pan and chill.
  • Preheat oven to 450° F.
  • Butter a 9-inch pie plate or quiche pan without a removable bottom.
  • Remove all bits of shell and cartilage and place crabmeat into the bottom of the pie plate.
  • Add the endive.
  • In a mixing bowl, beat eggs, flour, milk and a pinch of salt until well combined.
