8 cups water
1 small onion (minced)
2 tsps salt
0.125 tsp annatto
0.125 tsp paprika
freshly ground Black pepper (to taste)
1 cup frozen peas (thawed)
1 Pimento sliced for garnish (110 g|4 oz)

Steps:

  • Place rice in a large pot with a tightly fitting lid and add water. Stir in the onion, salt, annatto, paprika and pepper. Bring to a boil over medium-high heat. Reduce heat to low, put the lid on and simmer.
  • Cook until the rice is tender and the water has evaporated, about 20 minutes, stirring once halfway through. Garnish with pimento slices and serve.

4 cups long grain rice
8 cups water
1 small onion, minced
2 teaspoons salt
⅛ teaspoon annatto powder
⅛ teaspoon paprika
black pepper to taste
1 cup frozen peas, thawed
1 (4 ounce) jar sliced pimento peppers, for garnish

Steps:

  • Place the rice in a sieve and rinse under cold water until the water runs clear. Shake sieve to remove excess water from rice.
  • Place rice in a large saucepan with a tightly fitting lid and add water. Stir in the onion, salt, annatto powder, paprika, and pepper. Bring the mixture to a boil over medium-high heat. Reduce heat to low, cover pan, and simmer. After cooking for 10 minutes, gently stir the peas into the rice. Cook until all the water is evaporated and the rice is tender, 15 to 20 minutes longer. I usually have to double recipe so I can bring leftovers to work. Goes great with our Cuban chuck eye steak and Chimichurri topping, or even a marinated chicken dish.

1 cup long grain white rice
3 cups water
2 tablespoons garlic powder
3 tablespoons adobo seasoning (with or without pepper)
1 teaspoon salt
1 teaspoon cajun seasoning
1 (1/4 ounce) packet sazon con azafran seasoning (sold 6 to a box, individual packets have no weight on them, so I'm guessing, available in your Hispa)
1 tablespoon olive oil

Steps:

  • Combine all in the rice cooker. Takes about 20 minutes, depending on your cooker. You can adjust seasonings more or less, for your taste.
  • Stove top: Combine all except rice in a saucepan, bring to boil. Add rice and cover. Reduce heat to low, cook about 20-25 minutes. Sit 5 minutes, fluff with fork. (Your basic rice cooking instructions).

8-10 long strands saffron ((or double if broken))
1/4 cup HOT water
1/4 cup extra virgin olive oil
1 cup finely chopped onion
3 cups parboiled rice
1 tsp salt
1/2 tsp cumin
1/4 tsp paprika
1 tsp oregano
4 1/2 cup chicken broth
3 tbsp butter
1 cup frozen peas

Steps:

  • Place the saffron in the hot water, allow to steep for 20 minutes, the water will turn a deep yellow color.
  • After 20 minutes, pour the liquid through a fine mesh sieve (or coffee filter), discard the strands, reserve the liquid.
  • Heat a large sauté pan (one that has a lid, otherwise use a large saucepan) over medium heat, add the olive oil, roll to cover the pan, then add the onion.
  • Sauté the onion until it begins to turn translucent, about 5-7 minutes, add the salt and the rice.
  • Stirring constantly, cook the rice for several minutes until it begins to slightly brown.
  • Mix in the cumin, paprika, and oregano until they bloom and become fragrant.
  • Pour in the chicken broth and saffron liquid, mix well, and bring to a boil.
  • Boil for 2-3 minutes while stirring, reduce heat to low and continue to cook uncovered until the rice begins to absorb some of the water.
  • Cover, and cook for 20 minutes.
  • Stir in the peas, cover and continue to cook for 5 additional minutes or until the water has been completely absorbed.
  • Add the butter and using a fork, fluff the rice while mixing the butter in.
  • Serve and enjoy.

1 cup basmati rice
1 1/2 cups vegetable stock or water
1 teaspoon ground turmeric
Kosher salt
2 tablespoon ghee, coconut oil or olive oil
1 teaspoon brown mustard seeds
1/4 cup peanuts or broken cashew nuts
1 tablespoon split white urad dal
1/2 teaspoon asafetida
1/2 teaspoon crushed red chiles
10 to 15 fresh curry leaves (see Cook's Note)
1 lemon, zested and juiced

Steps:

  • Wash the rice in cold water until the water is no longer cloudy, 3 or 4 times, then drain. This step is important as it removes the starch from the rice and prevents it from clumping up.
  • Heat the stock or water in a heavy pan with a tight-fitting lid. Add the turmeric, 1/4 teaspoon salt and the drained rice. Bring to a boil, then reduce the heat to low, cover and cook for 15 minutes. Do not disturb the rice or take a peek while it's in the middle of cooking. Turn off the heat and let it sit, covered, for another 5 to 7 minutes.
  • Meanwhile, heat the ghee or oil in a pan large enough to fit the rice over medium-high heat. Add the mustard seeds and let sizzle until you hear popping sounds, about 30 seconds. Add the nuts and cook until golden brown and crunchy, about 2 minutes. Lower the heat to medium and add the urad dal, asafetida, crushed red chiles and curry leaves. Be careful as the curry leaves might sputter. Cook until the urad dal turn golden brown, about 3 minutes. Gently mix in the cooked rice.
  • Remove from the heat and add the lemon zest and 2 tablespoons of the lemon juice. Taste and add more salt and lemon juice if needed.

4 chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
3 1/2 cups hot water
1 medium garlic clove, minced
1 (10 ounce) package yellow rice
1/2 lb frozen peas, do not thaw
2 roasted red peppers, chopped
