I got this recipe from one of my cooking classes in college. It's the "old fashioned" type of appetizer, but one that makes a beautiful display on the plate and I never take any home with me because they disappear quickly.

1 large cucumber
1 (3 ounce) package cream cheese, softened
¼ cup blue cheese salad dressing
1 (1 pound) loaf cocktail rye bread
15 pimento-stuffed green olives, chopped

Steps:

  • Using the tines of a fork, score the unpeeled cucumber lengthwise on all sides. Slice the cucumber into 1/4-inch thick rounds.
  • In a small bowl, combine the cream cheese and blue cheese dressing. Spread the cheese mixture on the rye bread slices. Top with a slice of cucumber and a slice of olive.

1 large cucumber (unpeeled, skin washed)
0.5 (8 ounce) cream cheese, softened
1/4 cup bleu cheese salad dressing (or to taste)
1 small garlic clove, finely minced (may omit if desired)
1 loaf sliced rye cocktail bread (1-pound loaf, can use dark pumpernickle)
sliced pimento-stuffed green olives (use as many slices as needed)

Steps:

  • Slice the unpeeled cucumber into 1/4-inch slices/rounds.

1 medium cucumber
1 cup water
1/2 cup cider vinegar
1 package (8 ounces) cream cheese, softened
1/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon onion salt
1/8 teaspoon Worcestershire sauce
36 thin slices bread
Paprika
36 pimiento-stuffed olives

Steps:

  • With a fork, score cucumber lengthwise; cut into thin slices. Place in a bowl; add water and vinegar. Let stand for 30 minutes. Meanwhile, in a small bowl, beat cream cheese, mayonnaise, garlic powder, onion salt and Worcestershire sauce until smooth., Cut bread into flower shapes with a 2-1/2-in. cookie cutter. Spread each with cream cheese mixture; sprinkle with paprika and top with a cucumber slice. , Remove pimientos from olives; place in center of cucumber. Cut olives into five wedges and arrange around pimiento in a pinwheel pattern.
