WEST CUMBERLAND TEA BREAD

West Cumberland Tea Bread image

My Nanna used to make this for afternoon tea. She would serve it buttered and for Christmas and New Years it was served buttered with Rum Butter as a special treat. For the mixed dried fruit you can either use one or a combination of sultanas, raisins, currants and mixed peel. Glace cherries are also nice. This cake is moist and keeps well. It's good for picnics, camping, lunchboxes and pot lucks.

Tips:

  • Use fresh or frozen currants: Fresh currants are best, but frozen currants can also be used. If using frozen currants, thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make the bread tough. Mix just until the ingredients are combined.
  • Bake the bread at the right temperature: The bread should be baked at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool before slicing: Allow the bread to cool for at least 10 minutes before slicing. This will help prevent the bread from crumbling.
  • Store the bread properly: Store the bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.

Conclusion:

Currant tea bread is a delicious and easy-to-make treat that is perfect for any occasion. With its moist texture and sweet and tangy flavor, this bread is sure to be a hit with everyone who tries it.
