Time 40m

Yield 2 smažené sýry, 1 serving(s)

Number Of Ingredients 7

2 slices edam cheese, each 1/3 inch thick (can use some other favourite cheese that has a simillar consistence as Edam cheese-blue cheese,...)
1/4 cup flour
1 cup breadcrumbs
1 egg, lightly beaten
vegetable oil (for frying)
milk
salt

Steps:

  • In the begining its good to wash the cheese so the flour would stick on the cheese better when dipping.
  • Now take three plates and put flour into one of them, egg and a little bit of milk (just to make it more smooth) and a hint of salt to the second one and the breadcrubs to the third one.
  • (you need to mix the egg with milk with a fork so you cant see the yolk, egg white and milk but a kind of orange liquid)
  • Dip cheese slices into flour to form a light coating on all surfaces.
  • Dip each slice into lightly beaten egg and coat completely.
  • Dip each slice into breadcrumbs and coat completely, pat crumbs onto any areas that are not coated.
  • If needed repeat the point 4. and 5.- tastes better.
  • Pour oil into deep frying pan to a depth of 1/2 inch. Heat to 375 degrees F.
  • Carefully place slices in pan and fry on one side until golden-brown.
  • Turn and fry on the other side until golden brown. Pay attention so the cheese doesnt get out from the "coat"!
  • Serve with french fries and tatar sauce/ketchup.

Tips:

  • Select the Right Cheese: Opt for semi-hard cheeses like Edam or Gouda that melt well and hold their shape during frying. Avoid soft cheeses like mozzarella, as they tend to ooze out while frying.
  • Prepare the Cheese Properly: Cut the cheese into uniform-sized slices or cubes to ensure even cooking. If using a breaded variety, ensure the slices are not too thick, as they might not cook through properly.
  • Use the Right Coating: The coating helps the cheese stay intact and adds flavor. Popular options include flour, bread crumbs, and eggs. For a crispy coating, double-coat the cheese slices.
  • Fry at the Right Temperature: Use a deep fryer or a large saucepan filled with oil heated to around 350°F (175°C). The oil should be hot enough to fry the cheese quickly, preventing it from absorbing too much oil.
  • Don't Overcrowd the Pan: Avoid overcrowding the pan with cheese slices, as this can lower the oil temperature and result in soggy fried cheese. Fry the cheese in batches if necessary.
  • Drain on Paper Towels: After frying, transfer the cheese slices to a plate lined with paper towels to absorb excess oil.

Conclusion:

Czech fried cheese, known as Smažený sýr, is a delightful appetizer or main course that combines the gooey goodness of melted cheese with a crispy coating. By following these tips and using high-quality ingredients, you can easily prepare this iconic dish at home. Serve it with your favorite dipping sauce, such as tartar sauce, tomato sauce, or simply a squeeze of lemon juice, for a truly satisfying culinary experience.
