Time 50m

Yield 6 to 8 servings

Number Of Ingredients 10

Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
  • For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
  • Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

Dad's Oven Baked Macaroni and Cheese With a Kick image

I grew up on this recipe - it was a family favourite and I now make it for my husband and children and they all love it, too. We like things spicy, so I've added cayenne powder to my version.

Tips:

  • Use a good quality cheese. The type of cheese you use will greatly affect the flavor of your macaroni and cheese. A sharp cheddar cheese is a classic choice, but you can also experiment with other types of cheeses, such as Parmesan, Gruyère, or fontina.
  • Don't overcook the macaroni. Macaroni that is overcooked will be mushy and unpleasant to eat. Cook the macaroni according to the package directions, or until it is al dente (slightly firm to the bite).
  • Make a creamy sauce. The sauce for macaroni and cheese should be creamy and flavorful. Use a combination of milk, butter, and flour to make a roux, then add the cheese and stir until it is melted and smooth.
  • Add some kick. If you like your macaroni and cheese with a little bit of a kick, you can add some cayenne pepper, paprika, or chili powder to the sauce. You can also top the macaroni and cheese with crumbled bacon, chopped jalapeños, or diced tomatoes.
  • Bake until golden brown. Once you have assembled the macaroni and cheese, bake it in the oven until it is golden brown and bubbly. This will give the macaroni and cheese a crispy top and a creamy interior.

Conclusion:

Macaroni and cheese is a classic comfort food that is loved by people of all ages. It is a simple dish to make, but there are a few tips that you can follow to ensure that your macaroni and cheese is perfect. By using a good quality cheese, not overcooking the macaroni, making a creamy sauce, adding some kick, and baking until golden brown, you can create a macaroni and cheese that is both delicious and satisfying.
