4 cups whole milk
2-1/2 cups sugar
1/4 teaspoon salt
4 large eggs, beaten
5 cups heavy whipping cream
2 cups pureed peaches or nectarines
3 teaspoons vanilla extract
1/4 to 1/2 teaspoon almond extract, optional

Steps:

  • In a heavy saucepan, heat milk to 175°. Stir in sugar and salt until dissolved. Gradually stir a quarter of the hot mixture into eggs, mixing constantly. Return all to the saucepan, stirring constantly. Continue to cook and stir for 10-12 minutes or until a thermometer reads 160° and the mixture coats the back of a metal spoon. Remove from the heat; cool. Chill for at least 2 hours or overnight., In a large bowl, combine the cream, fruit, vanilla and almond extract if desired. Add the chilled milk mixture, stirring well., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. 1 (14 ounce) can brand sweetened condensed milk

Crust:
3 cup all-purpose flour, plus more for dusting
3 tablespoons sugar
2 teaspoons kosher salt
¾ cup (1½ sticks) unsalted butter, cut into cubes and chilled
1 cup ice-cold water, plus more as needed
Filling:
3½ pounds fresh peaches, pitted and quartered or two (29-ounce) cans peaches, drained
1 cup sugar
¼ cup all-purpose flour
1 tablespoon ground cinnamon
½ teaspoon freshly grated nutmeg
Fine sea salt
To Assemble:
1 large egg, beaten
Ground cinnamon, for dusting
Sugar, for dusting
Ice cream, for serving

Steps:

  • Make the crust: In the bowl of a food processor, pulse together the flour, sugar, and 2 teaspoons salt until just combined. Add the butter and pulse a few more times until the mixture is coarse but the butter pieces are still visible. Slowly add the ice water and pulse to form a dough, six to eight pulses.
