For the oatmeal cookie lovers, oatmeal pancakes for breakfast! Not too sweet. Syrup is optional, may not even want it after they are cooked! A great way to get your kids that extra healthy dose of oats in their day!

2 cups buttermilk
¾ cup quick-cooking oats
¼ cup butter, softened
2 eggs
2 tablespoons brown sugar
2 tablespoons baking powder
1 tablespoon baking soda
1 tablespoon pancake syrup
1 teaspoon ground cinnamon
½ teaspoon salt
1 pinch ground nutmeg
⅓ cup raisins
1 tablespoon vegetable oil, or as needed

Steps:

  • Mix buttermilk, oats, butter, eggs, brown sugar, baking powder, baking soda, syrup, cinnamon, salt, and nutmeg together in a large bowl; fold in raisins.
  • Oil a griddle over medium heat. Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, about 5 minutes. Flip pancakes and cook until browned on the other side, 2 to 3 more minutes. Repeat with remaining batter.

Fruity Oatmeal Pancakes (Eggless & Dairy Free) image

We love pancakes, oatmeal and fruit but can't eat eggs so after trying several eggless pancake recipes, I altered them and created this one. My daughter loves them and will eat 3 pancakes --- she's only 2. Thankfully they are healthy.

Number Of Ingredients 10

1 cup oat flour
2/3 cup whole wheat flour
1/4 teaspoon salt
1 tablespoon baking powder
1 tablespoon sugar
1 cup rice milk
3/4 cup pulp free orange juice
1 banana, mashed
10 strawberries, mashed
1/2 pint blueberries

Steps:

  • If you can't find oatmeal flour, you can make your own by grinding up Quaker Oatmeal in your blender until it is a fine powder.
  • Don't have oatmeal either, you can use white flour as a substitute.
  • Mix first 5 dry ingredients together in a large mixing bowl.
  • Mash your banana and strawberries together in a separate bowl.
  • Add whole blueberries, milk and OJ to the banana mix and stir together.
  • Pour fruit mixture into the dry ingredients and stir until moist.
  • Add more milk or juice if you like a thinner batter.
  • Set batter aside for 10 minutes.
  • Preheat your griddle to 350°F.
  • Pour 1/4 cup batter on griddle and cook for approximately 3-4 minutes or until the bottom side is golden or the top of the pancake starts to bubble.
  • Flip and cook on other side until golden brown, approximately 3 minutes.
  • Serve with butter and syrup, honey or fresh fruit on top.
