1 cup crushed pineapple
1/2 cup sugar
1/2 chopped green pepper
1/4 cup chopped pimiento
1/2 clove garlic, mashed
1/2 cup cider vinegar
1/4 cup water
2 tablespoons soy sauce
10 drops Tabasco sauce
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Use 1 Quart glass or enamel sauce pan.
  • Combine pineapple, sugar green pepper, pimiento, garlic, vinegar, 1/4 cup water, the soy sauce, and Tabasco.
  • Mix and heat slowly 5 minutes.
  • Remove garlic.
  • Stir cornstarch into 1/4 cup of water until smooth.
  • Stir into hot mixture.
  • Cook, stirring constantly, until thickened and clear, about 5 minutes' boiling.
  • Makes 4 main-dish servings or 6 or more appetizer servings.
  • Serve with fried Shrimp, or a dip for Chicken Fingers or strips.
  • Add rice for a main meal.

1 tablespoon vegetable oil
1 tablespoon peeled and grated fresh ginger
2 cloves garlic, minced
1 cup pineapple or orange juice
2 tablespoons rice vinegar
1 heaping tablespoon brown sugar
1 tablespoon light soy sauce
1 tablespoon cornstarch blended with 2 tablespoons cold water

This is from a recipe I found in one of Craig Claibourne's cookbooks. It's my favorite sweet and sour sauce, which I sometimes use as is, sometimes add ingredients too. If you prefer a thicker sauce, add more cornstarch. If you prefer a darker red sauce, add more red food coloring. You can also add ketchup but it will change the flavor. It's a nice, light sauce.

3/4 cup white vinegar
1/2 cup water, plus
2 tablespoons water
3/4 cup pineapple juice
1 1/2 tablespoons cornstarch
1/2 teaspoon red food coloring

  • In a small saucepan, combine the sugar, vinegar, 1/2 cup water and pineapple juice. Bring to a boil and simmer, stirring, until sugar dissolves.
  • Blend the cornstarch with the remaining 2 tablespoons of water. Bring the pineapple juice mixture to the boil again, and stir the cornstarch mixture into the sauce, stirring a few moments until thickened.
