Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 3

24 large dried Medjool dates with pits (14 ounces)
6 ounces sharp blue cheese, such as Bleu d'Auvergne
1/4 pound thinly sliced prosciutto (8 to 10 large slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
  • Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
  • Cool slightly and serve warm.

BLUE CHEESE AND PECAN STUFFED DATES

Blue Cheese and Pecan Stuffed Dates image

Per Whole Foods' website, "To ease the party rush, make the filling for these dates a few days in advance, keeping in mind that the flavor will get stronger over time. For a vegetarian version omit the bacon and sauté the onions in olive oil instead of the bacon grease."

Try this as an appetizer at your next bbq. Recipe from Weber's Time to Grill™ by Jamie Purviance.

Time 21m

Yield 6 serving(s)

Number Of Ingredients 6

1 cup balsamic vinegar
1/2 cup granulated sugar
3 ounces soft blue cheese
1/2 cup finely chopped pecans or 2 ounces pecans
24 medjool dates or 1 lb medjool dates
canola oil cooking spray

Steps:

  • If using bamboo skewers, soak in water for at least 30 minutes.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a small saucepan combine the vinegar and sugar. Bring to a simmer and cook until the mixture coats the back of a spoon, about 10 minutes, stirring occasionally. Set aside.
  • In a small bowl mash the blue cheese and pecans together with a fork. Make a small slice the length of each date and pull out the pit. Stuff each date with about 1 teaspoon of the cheese mixture, pressing it closed as much as possible. Thread two dates on each skewer so that the skewer goes through both halves of each date. Lightly spray with the canola oil.
  • Brush the cooking grates clean. Grill the dates over direct medium heat, with the lid closed, until heated through, about 1 minute.
  • Arrange the dates on a platter and let cool for 10 minutes. Serve the dates warm with the glaze.

DATES STUFFED WITH ALMONDS AND BLUE CHEESE

Dates Stuffed With Almonds and Blue Cheese image

Another in Boqueria's chef Sean Mullen's "tapas for 8" party menu. Substitute any blue cheese if you cannot get the one in the recipe, and any almond if you dont have marcona.

Provided by MarraMamba

Categories     Cheese

Time 17m

Yield 4-6 serving(s)

Number Of Ingredients 5

16 madjool dates
16 marcona almonds, toasted
1/4 lb valdeon blue cheese or 1/4 lb cabrales blue cheese
8 slices bacon, each cut in half
16 toothpicks

Steps:

  • Cut each date along one side, removing the pit and replacing it with a toasted Marcona almond.
  • Place a teaspoon of the cheese inside the date and close it. Wrap each date with half a slice of bacon and secure it with a toothpick.
  • Bake in a 400-degree oven until golden brown, about 5 to 7 minutes.

Tips:

  • Choose ripe dates: Look for dates that are plump, soft, and have a deep brown color. Avoid dates that are dry, wrinkled, or have a green tint.
  • Pit the dates: To pit dates, use a sharp knife to slice them lengthwise and remove the pit. You can also buy dates that are already pitted.
  • Soften the dates: If the dates are dry, you can soften them by soaking them in warm water for 10-15 minutes. This will make them easier to blend or chop.
  • Use a variety of cheeses: Blue cheese is a classic choice for pairing with dates, but you can also try other types of cheese, such as goat cheese, brie, or cheddar. Experiment until you find a combination that you like.
  • Add some crunch: To add some crunch to your dish, try adding nuts, seeds, or crispy bread crumbs.
  • Serve immediately: Most date and blue cheese dishes are best served immediately after they are made. This is because the dates can become soggy if they sit for too long.

Conclusion:

Dates and blue cheese are a delicious and versatile combination that can be used in a variety of dishes. From appetizers to desserts, there are endless possibilities for creating unique and flavorful dishes with these two ingredients. So next time you're looking for something new to try, give one of these recipes a try. You won't be disappointed!
