GARDEN DILL POTATO SALAD

Garden Dill Potato Salad image

This is a recipe, my mom and I came up with when we had an abundance of cucumbers in our garden. Once we added them, we just started to add the rest of our garden. It's truly a Garden Potato Salad. Don't forget to add and subtract to your families taste. Don't have regular tomatoes? Well if you have a bumper crop of cherry...

  • Fresh herbs elevate the flavor of this salad. If you don't have fresh dill, you can substitute 1/4 cup of dried dill weed.
  • For a cool and crisp salad, chill the cucumber and radishes before slicing.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • To make a vegan version of this salad, omit the buttermilk and mayonnaise. You can substitute a plant-based milk, such as almond or soy milk, for the buttermilk, and a vegan mayonnaise substitute, such as Vegenaise or Just Mayo, for the mayonnaise.
