1/2 cup uncooked rice
1 1/4 cups low sodium chicken broth
1/2 cup water
1 cup fresh asparagus, cut in 2 inch pieces
1 boneless skinless chicken breast, cut in bite size pieces
1 tablespoon lemon juice
2 teaspoons olive oil
1 1/2 teaspoons dried dill weed
1/8 teaspoon salt
1 tablespoon parsley, finely chopped

Steps:

  • Cook the rice in chicken broth as per package directions, approximately 15 to 20 minutes for white rice.
  • Add the 1/2 cup water to a 12-inch nonstick skillet; bring to a boil.
  • Add the asparagus and return to boil, reduce heat, cover and simmer for approximately 3 minutes or until crisp-tender.
  • Drain asparagus and set aside.
  • Wipe out the skillet with a paper towel.
  • Spray skillet with non-stick cooking spray.
  • Heat over medium-high heat until hot.
  • Add chicken and cook 3 minutes or until no longer pink, stirring frequently.

1 pound Yukon Gold potatoes, cut into 1-inch pieces
1 head garlic, cloves separated and peeled
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 skinless, boneless chicken breasts (about 6 ounces each)
1 bunch medium asparagus (about 1 pound), trimmed and halved
1 pint grape tomatoes
1/2 cup grated parmesan cheese (about 1 ounce)
1/4 cup chopped fresh parsley
2 teaspoons finely grated lemon zest

Steps:

  • Put a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Toss the potatoes and garlic cloves with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl; set aside.
  • Season the chicken with 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chicken; cook until browned, 1 1/2 to 2 minutes per side. Transfer to the hot baking sheet. Scatter the potatoes and garlic around the chicken; reserve the bowl. Bake until the chicken is just cooked through, about 5 minutes. Transfer the chicken to a plate and tent with foil; leave the potatoes and garlic on the baking sheet.
  • Add the asparagus and tomatoes to the reserved bowl; toss with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt. Add to the baking sheet with the potatoes. Bake until the vegetables are tender and the tomatoes start to burst, 13 to 15 minutes.

1 ⅓ tablespoons olive oil
1 onion, chopped
1 cup chopped, cooked chicken meat
1 red bell pepper, chopped
2 stalks celery, chopped
1 cup chicken stock
1 ½ cups sour cream
½ teaspoon dried oregano
1 pound fresh asparagus, trimmed and cut into 2 inch pieces
8 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1 1/2 quart casserole dish.

8 asparagus spears, trimmed - divided
½ cup shredded mozzarella cheese, divided

  • Preheat an oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
  • Place each chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to an even thickness of about 1/4 inch. Sprinkle each side with salt and pepper.

2 tablespoons red-wine vinegar
3 bunches arugula (12 to 16 ounces total), thick stems removed, washed well

Steps:

6 shallots, peeled and cut crosswise three times
1 2 1/2-pound chicken, cut up, backbone and wing tips reserved for broth
3/4 pound asparagus, trimmed, peeled and cut in 1 1/2 inch pieces, about 2 cups
1 cup chicken broth, canned or fresh
2 tablespoons cornstarch, dissolved in 1/4 cup cold water
2 tablespoons fresh lemon juice
2 tablespoons minced fresh dill
1 tablespoon kosher salt
Fresh ground black pepper

Steps:

  • Scatter shallots in bottom of a 2-quart souffle dish.
  • At the knobby, small end of each chicken leg, cut through skin and tendons.
  • Arrange legs and thighs along the inside rim of the souffle dish. Place breast halves, bone side up, in center of dish. Fit wings in between legs and thighs. Mound asparagus in center of dish. Pour broth over all. Cover tightly with microwave plastic wrap. Cook at 100 percent for 10 minutes.

2 leeks, trimmed, thinly sliced, and well rinsed (4 cups)

1 1/2 cups low-sodium chicken broth
1 pound very small red potatoes (each 1 inch diameter), halved
1 pound asparagus, trimmed and cut into 2-inch pieces
1/4 cup heavy cream
Dill sprigs, for serving

Steps:

  • Preheat oven to 450 degrees. Season chicken with salt and pepper. In a large, straight-sided ovenproof skillet, melt butter over medium-high heat. Add chicken to skillet, skin-side down; cook until golden brown, about 5 minutes a side. Transfer to a plate.

1 lb boneless skinless chicken breast, cut bite-size
2 teaspoons oil

8 ounces fresh asparagus, ends trimmed, spears cut bite-size
1 cup grape tomatoes, halved
2 tablespoons chopped scallions
2 tablespoons chopped dill

36 whole peppercorns
2 quarts water
2-1/2 cups white vinegar
1/2 cup sugar
3 tablespoons canning salt

  • Wash, drain and trim asparagus; cut into 4-1/2-in. spears. Discard ends or save for another use. Place asparagus in a large container; cover with ice water. In each of six 1-pint jars, place half of a garlic clove, 1 teaspoon dill seed, 1 teaspoon mustard seed and six peppercorns., In a Dutch oven, bring the water, vinegar, sugar and salt to a boil.
