1 shallot, finely chopped
3 cloves garlic, finely chopped
1 cup half-and-half
8 ounces reduced-fat cream cheese, cubed, at room temperature
8 ounces grated drunken goat cheese
1 pound claw crabmeat, picked through for shells and cartilage
1/4 cup chopped fresh parsley
1/4 cup panko breadcrumbs
1/2 teaspoon paprika
Whole-wheat pita chips, for serving

Remove from the heat and stir in the crabmeat and 2 tablespoons of the chopped parsley. Pour into a 1 1/2-quart casserole dish.

Provided by Patrick and Gina Neely : Food Network

Time 1h50m

Yield 2 sandwiches

Number Of Ingredients 10

4 slices sourdough bread
Roasted Shallot Mayo, recipe follows
1 cup (4 ounces) drunken goat cheese, grated
Baby arugula
Butter, room temperature
1 shallot, peeled
1 clove garlic, peeled
Olive oil
Kosher salt and freshly ground black pepper
1 cup mayonnaise

Steps:

  • Heat a 12-inch cast iron skillet over medium heat.
  • Spread each bread slice with Roasted Shallot Mayo. Add layers of grated goat cheese, a small handful arugula, and finish with more grated cheese, then top with bread. Repeat for the second sandwich.
  • Add the sandwiches to the hot skillet and cook until golden brown and crisp and the cheese is melted, 4 to 5 minutes per side. Cut the sandwich in 1/2 before serving.
  • Preheat the oven to 350 degrees F.
  • Place the shallot and garlic on a square of aluminum foil. Drizzle lightly with olive oil and sprinkle with salt and pepper. Fold up and seal the foil. Place in the oven and roast for 1 hour. Remove and let cool.
  • Add the shallot and garlic to a bowl. Add the mayonnaise and mix together until smooth.

Tips:

  • Choose the Right Goat Cheese: Opt for a firm, fresh goat cheese that can hold its shape during baking, such as a log or round.
  • Prepare the Cheese: If using a log, slice it into rounds; if using a round, cut it into wedges. You can also use a cheese knife to score the surface of the cheese, creating a criss-cross pattern, to help the marinade penetrate.
  • Create a Flavorful Marinade: Combine extra virgin olive oil, fresh herbs like thyme, rosemary, or oregano, minced garlic, lemon zest, and a splash of dry white wine. You can also add a drizzle of honey or agave syrup for sweetness and a pinch of red pepper flakes for a touch of heat.
  • Marinate the Cheese: Place the goat cheese in a shallow dish and pour the marinade over it, ensuring it's evenly coated. Cover and refrigerate for at least 30 minutes, or up to overnight, to allow the flavors to meld.
  • Bake at the Right Temperature: Preheat your oven to 400°F (200°C) for a crispy exterior and a gooey, melted center. Adjust the baking time depending on the size and thickness of your goat cheese. Smaller rounds or wedges may only need 10-12 minutes, while thicker slices or logs may require 15-20 minutes.
  • Serve with Accompaniments: Once baked, let the goat cheese cool slightly before serving. Pair it with crackers, crostini, sliced baguette, or fresh fruit like grapes or berries. Drizzle with any remaining marinade or sprinkle with chopped fresh herbs for extra flavor.

Conclusion:

Drunken goat cheese is an easy and delicious appetizer that's perfect for any occasion. With its creamy, tangy center and crispy, flavorful crust, it's sure to be a hit among your guests. Experiment with different herbs, spices, and wine variations to create your own unique drunken goat cheese recipe. No matter how you choose to enjoy it, drunken goat cheese is a versatile and delightful treat that will leave you wanting more.
