EASY SHREDDED BEEF GREEN CHILE ENCHILADA CASSEROLE

Easy Shredded Beef Green Chile Enchilada Casserole image

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

Time 45m

Number Of Ingredients 7

18 oz bbq sauce (i use kraft hickory)
2 c biscuit mix
2 c grated cheddar cheese
2 eggs
1 c milk
1 lb ground beef
3/4 c chopped sweet onion

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In a skillet, cook ground beef and onion until beef is browned and onion is translucent. Drain the grease well.
  • 3. Stir in the BBQ sauce. Mix well.
  • 4. Spoon the mixture into a 9 x 13 inch baking dish.
  • 5. Sprinkle the cheese evenly over the beef mixture.
  • 6. In a bowl, stir together the biscuit mix, eggs, and milk until well blended.
  • 7. Pour this carefully over the beef mixture.
  • 8. Bake for 25 minutes or until the crust is golden brown.

Tips:

  • Selecting the right cut of beef is crucial for a tender and flavorful casserole. Look for chuck roast, brisket, or short ribs, which are well-suited for slow cooking and develop a rich taste.
  • Browning the beef before stewing enhances its flavor and adds depth to the casserole. Sear the beef in a hot skillet until browned on all sides, then transfer it to the slow cooker.
  • Adding vegetables to the casserole not only enhances its nutritional value but also adds sweetness and texture. Choose a variety of vegetables that complement the beef, such as carrots, celery, onions, potatoes, and mushrooms.
  • Seasoning the casserole with herbs and spices is essential for creating a flavorful dish. Use a combination of dried or fresh herbs, such as thyme, rosemary, oregano, and basil, along with salt and pepper to taste.
  • Using a good quality beef broth or stock as the liquid base adds richness and depth to the casserole. You can also incorporate red wine or beer for a more complex flavor profile.
  • Cooking the casserole on low heat for an extended period allows the beef to become tender and the flavors to meld together. Aim for at least 8 hours of cooking time, or overnight if possible.
  • Garnish the casserole with fresh herbs or a sprinkle of cheese before serving for an appealing presentation and extra flavor.

Conclusion:

Beef casserole is a versatile and comforting dish that can be enjoyed by people of all ages. With its tender beef, flavorful sauce, and hearty vegetables, it's a perfect meal for a cold winter night or a casual family gathering. Experiment with different ingredients and cooking methods to create your own unique version of this classic dish.
